Creamy Chicken and Rigatoni

- Heat oil in Dutch oven over medium-high heat. Cook chicken, garlic, basil and oregano in oil about 5 minutes, stirring frequently, until chicken is no longer pink in center.
- Stir in tomatoes, whipping cream, salt, pepper and red pepper. Heat to boiling; reduce heat to low. Simmer uncovered about 10 minutes or until slightly thickened.
- Cook and drain rigatoni as directed on package. Stir rigatoni and vegetables into chicken mixture; cook until hot. Serve with cheese.
Snackity Snack

Microwave popcorn. Dump into a large bowl
- 2 (3.3 oz bags) microwave buttered popcorn
- 2 cups salted mixed nuts
- 2 cups Craisins (dried cranberries)
- 2 (12 oz bags) white chocolate chips
- 1 t. cinnamon
Chili Cheese Dog Grilled Cheese Sandwich

Top each slice of bread with American cheese
- 2 slices white bread
- Butter
- 2 slices American cheese
- 2 hot dogs, sliced lengthwise
- No-bean chili
Beef and Broccoli Stir-fry

Combine 1 T cornstarch, soy sauce, and garlic powder
- 1 lb round steaks, cut into thin (3-in) strips
- 3 T cornstarch (divided)
- 1/3 c soy sauce
- 1 t garlic powder
- 1 bag broccoli florets, fresh or frozen
- 3 green onions, sliced
- 1/2 c water
- 1/2 tsp red pepper flakes
- 2 T honey
- 1 t ground ginger
- 1 can sliced water chestnuts
COUNTRY STYLE BBQ PORK RIBS

Combine all the sauce ingredients together, and stir well
- SAUCE:
- 1 Package extra lean boneless country style pork ribs
- (My package is 3.14 lbs – with 8 ribs.) Double this recipe for a large family.
- I trim any extra fat – AWAY!
- In a medium sized bowl, mix together : (I like to double this recipe for 8 to 10 ribs)

- 1 -Can Crushed Pineapple with juice
- 1 cup Ketchup
- 4-5 shots of Worchestershire Sauce
- 1 cup Brown Sugar (You can also decrease this to 3/4 cup if you like)
- 1 Teaspoon dry mustard
- 1 teaspoon ginger
- Salt & Pepper to tast
Twice Baked Potato Casserole

Preheat oven to 350 degrees
- 5 lbs. russet potatoes
- 10 slices bacon
- 8 oz. cream cheese softened
- 1/2 cup butter melted
- 1 cup sour cream
- 1/4 cup chives minced
- 2 1/2 cups cheddar cheese grated
- 2 tsp. salt
- 1/2 tsp. pepper
Almost White Castle Sliders

Preheat oven to 400°F. In a 13×9 inch dish, spread onions evenly
- 1/2 cup dehydrated onion flakes
- 2 lbs 80/20 ground chuck beef (you need the fat for re-hydrating the onions)
- seasoned salt
- 6 slices cheese, American or Cheddar
- 24 small dinner rolls
- 24 sliced dill pickles
- ketchup or mustard as desired

1. Preheat oven to 350 degrees
- For the cupcakes:
- 3 large eggs
- 1 cup sour cream
- 1 box lemon pudding mix
- 1/2 cup oil
- 1/2 cup milk
- 1/4 cup fresh lemon juice
- 1 teaspoon grated lemon zest
- 1 box lemon cake mix
- For the frosting:
- 1 stick unsalted butter, softened
- 1 8-ounce package cream cheese, softened
- 1 teaspoon vanilla extract
- 1 1/4 teaspoons grated lemon zest
- 5 cups powdered sugar
- Splashes of heavy cream
- Yellow food coloring, if desired
