Chicken and Sausage Gumbo

In a large stockpot or Dutch oven set over medium-high heat, cook the bacon until crispy
- For the Cajun spice mix:
- 6 oz. bacon, diced
- 2 lbs. chicken legs or thighs, bone-in and skin-on
- Salt
- 1 lb. andouille sausage, sliced (or spicy Italian sausage, crumbled)
- 1/2 cup peanut or other vegetable oil
- 1 cup flour
- 2 green bell peppers, seeded and diced
- 4 stalks celery, diced
- 1 large onion, diced
- 4 cloves garlic, minced
- 2 tbsp. tomato paste
- 4 cups chicken stock
- 4 cups water
- 1/2-1 lb. okra, sliced into discs
- 3 green onions, chopped
- Chopped fresh parsley, for serving
- 1 tsp. black pepper
- 1/2-1 tsp. cayenne pepper
- 1 tsp. celery seed
- 2 tbsp. sweet paprika
- 1 tbsp. garlic powder
- 1 tbsp. dried thyme
- 1 tbsp. dried oregano
Roasted Green Beans

Preheat oven to 425 degrees
- 1 lb. fresh green beans
- drizzle of extra virgin olive oil
- 1/2 tsp. salt
- 1/2 tsp. freshly ground black pepper
Curried Honey Baked Chicken

Combine olive oil, honey, mustard, salt, and curry powder and stir to combine
- 1/4 cup olive oil
- 1/4 cup honey
- 1 tbsp dijon mustard
- 1 tsp salt
- 1 tsp curry powder
- 4 chicken breast
CHEESEBURGER EMPANADAS

Let pie crusts & cream cheese come closer to room temp before handling
- Seasonings:
- 1 package, lean ground turkey or beef (you'll only use HALF!)
- 1 box, pie crust (refrigerated, comes with two rounds of dough)
- 2 cups shredded Colby Jack cheese (pepper jack would be good too!)
- 1/2 cup cream cheese
- 1/2 white or red onion, diced
- 2 cloves garlic, chopped
- 3 Kosher dill pickles, chopped
- ketchup
- yellow deli mustard
- worcestershire sauce
- mayo
- 1 egg yolk (for browning pie crusts)
- salt & pepper
- cayenne pepper
- garlic salt
- ground cumin
- paprika
- steak seasoning as desired
- Simple Burger Dipping Sauce:
- 4 T ketchup
- 3 tsp yellow mustard
- 1 tsp Worcestershire sauce
- 1 T mayo
- 1 tsp red pepper jelly if you want a little kick!
Shepherd's Pie

Preheat oven to 350 degrees F
- 2 pounds of ground beef
- 1/2 cup of chopped bell pepper
- 1 cup of chopped onion
- 1 teaspoon of minced garlic
- 1 cup of diced carrots
- 1 (10 ounce) can of mild Rotel tomatoes, drained
- 1/2 teaspoon of kosher salt, or to taste
- 1/4 teaspoon of freshly cracked black pepper, or to taste
- 1/4 teaspoon of dried thyme
- 1/4 teaspoon of dried basil
- 1/4 teaspoon of Cajun seasoning (like Slap Ya Mama), or to taste
- 1/2 cup of beef stock or broth
- Couple dashes of Worcestershire sauce
- 1 tablespoon of all purpose flour
- 1 large egg, beaten
- 1-1/2 cups of shredded cheese, divided
- 1 cup of frozen peas, thawed
- 4 cups of leftover mashed potatoes
- 1 tablespoon of melted butter
Strawberry Cheese Danish

Seperate dough into four rectangles
- Glaze:
- 1 tube (8 oz) refrigerated crescent rolls
- 4 ounces cream cheese, softened
- 1/4 cup sugar
- 2 tablespoons lemon juice
- 8 teaspoons Strawberry preserves
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 2 teaspoons milk
City Chicken (Mock Chicken Dish)

Cut pork into bite size cubed pieces
- 2 lbs - boneless pork, cut into cubes
- (I used boneless pork sirloin chops)
- 1/2 - cup flour
- 1/4 - tsp pepper
- dash of garlic powder
- 1/4 - cup butter or margarine
- 3 - tablespoons vegetable oil or olive oil
- 1 - packet dry onion soup mix
- 1 - 10 oz can low sodium chicken broth
- 1 - cup water
- 1 - bay leaf
Classic Cranberry Sauce

Combine all three ingredients in a medium pot
- 1 pound fresh cranberries
- 1 cup orange juice
- 1 cup sugar
Crock Pot Buffalo Chicken

Put frozen chicken, wing sauce, and ranch dip mix into crock pot
- 3 lb. bag of frozen chicken breasts
- 1 bottle Frank's Wings Buffalo Sauce
- 1 packet Ranch Dip Mix
- 2 TBSP butter
Creamy Roasted Garlic Smashed Potatoes

1. Boil potatoes until fork-tender
- 1 1/2 pounds baby red potatoes
- 1/2 cup heavy cream
- 3 ounces cream cheese
- 1/4 cup parmesan cheese
- 1/4 to 1/2 cup butter (depending on how buttery you like your potatoes)
- 2 cloves roasted garlic, smashed
- Salt and pepper to taste
