Garlic Lemon Chicken Linguine

Boil pasta according to package directions
- 2 boneless skinless chicken breasts
- Cooking Spray
- 1/4 tsp. kosher salt
- 1/4 tsp. freshly ground black pepper
- 1/2 box linguine noodles
- 1 tbsp. olive oil
- 2 cloves garlic, minced
- 2 tbsp. chicken broth
- 1/4 cup water
- Juice of one lemon
- 2 tbsp. light margarine or butter
- 1 tsp. capers
- 1/2 cup fresh mushrooms
- 2-3 slices ham or canadian bacon, cut into small strips
- 1/2 tbsp. italian seasoning
- 2 tbsp. fat free half and half
- 1/8 cup grated parmesan cheese, plus more for topping
- Fresh chopped parsley for topping
Sticky Wings Recipe

Preheat oven to 350 degrees
- 4 pounds chicken wings
- 16 ounce jar whole plums, save juice, remove pits, chop
- 1/4 cup chicken stock
- 1 tablespoon soy sauce
- 1 garlic clove, minced or grated on micro plane
- 2 tablespoons molasses
- 1 tablespoon white vinegar
- salt and pepper to taste
Chicken and Black Bean Green Enchilada Rice Bake

1. Preheat oven to 350 degrees F
- 2 cups white long grain rice
- 2 1/2 cups cooked, shredded chicken breast
- One 15-ounce can mild green enchilada sauce
- One 4-ounce can sliced black olives
- One 15-ounce can diced tomatoes
- 1/2 cup sour cream
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon McCormick Gourmet Roasted Ground Cumin
- One 15-ounce can black beans, drained and rinsed
- 2 cups shredded cheddar cheese
CHEESY BROCCOLI GRATIN

1. Preheat oven to 400°F
- 1/4 cup butter
- 1/4 cup flour
- 2 cups milk
- 1/8 teaspoon ground nutmeg
- 1/4 teaspoon thyme
- 8 oz cheddar cheese
- 24 oz frozen broccoli florets, thawed
- 1/3 cup panko bread crumbs
- 1/2 cup grated Parmesan cheese
Coconut Shrimp with Sweet Chili Apricot Sauce

1. Heat a dutch oven with enough oil to fill the pot so that the shrimp will not touch the bottom
- 1 lb. medium shrimp (uncooked, peeled and deveined)
- 1 c. flour
- 2 eggs, beaten
- 1 c. sweetened, shredded coconut (or unsweetened, fresh)
- 1 c. panko bread crumbs
- salt and pepper
- Oil of your choice, a lot
- 1/2 c. sweet chili sauce
- 1/4 c. apricot preserves
- 1 tsp. sriracha

Gina's Oxtail Stew

- 5 pounds meaty oxtails
- Kosher salt and freshly ground black pepper
- 1/4 cup all-purpose flour
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 carrots, cut into half moons, about 1/4-inch thick
- 2 stalks celery, cut into 1/4-inch thick pieces
- 3 tablespoons chopped fresh thyme leaves
- 4 cloves garlic, peeled and smashed

- 1 (750 ml) bottle dry red wine

- 1 teaspoon baking powder

- 1/3 cup vegetable oil
- 3 large eggs, slightly beaten

- 4 hard boiled eggs
- 1 1/2 tablespoons finely minced onion
- 1 1/2 tablespoons finely minced celery
- 1/4 cup cubed ham {easter leftovers :) }
- 2 tablespoons finely minced dill pickles
- 1 heaping tablespoon mayonnaise
- 1 heaping tablespoon sour cream
