In mixer, blend butter and sugar until creamy
- 1/2 cup granulated sugar
- 1 egg
- 1/2 tsp vanilla extract
- 2 bananas, mashed
- 1 cup flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp kosher salt
COMEBACK SAUCE

- 1/3 cup chili sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper

- 16 oz Can Refried Beans
- 12 oz Chicken- chopped
- 16 oz Jar Chunky Salsa
- 8 oz Pkg Shredded Cheese
- Tortilla Chips
Big Batch Chili

In a large skillet over medium-high heat, work in batches to brown the ground chuck
- 4 lbs ground chuck
- 2 medium onions, chopped
- 1 green bell pepper, chopped
- 2 garlic cloves, minced
- 3 (14 1/2 ounce) cans diced tomatoes, untrained
- 4 (8-ounce) cans tomato sauce
- 1 (6-ounce) can tomato paste
- 1/4 cup chili powder
- 1 tbs sugar
- 1 teas salt
- 1 teas black pepper
- 1/2 teas paprika
- 1/2 teas ground red pepper
- 1 bay leaf
- 2 (16-ounce) cans light red kidney beans, rinsed and drained
- Toppings: sour cream, shredded Cheddar cheese, chopped green onions, sliced ripe black olives
Pecan Pie Cheesecake

Crust: Preheat oven to 350°
- Crust:
- 1 3/4 cups vanilla wafer crumbs
- 1/4 cup firmly packed brown sugar
- 1/3 cup butter, melted
- Pecan Filling:
- 1 cup sugar
- 2/3 cup dark corn syrup
- 1/3 cup butter, melted
- 2 eggs
- 1 1/2 cups chopped pecans
- 1 teaspoon vanilla extract
- Cheesecake Filling:
- 3 (8-ounce) packages cream cheese, softened
- 1 1/4 cups firmly packed brown sugar
- 2 tablespoons all-purpose flour
- 4 eggs
- 2/3 cup heavy whipping cream
- 1 teaspoon vanilla extract
Oatmeal Chocolate Moon Pies

Preheat oven to 350°. Line baking sheets with parchment paper or silpat liners
- Cookies:
- 3/4 cup (1 1/2 sticks) butter, room temperature
- 1 1/2 cups packed dark brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 1/4 cups old-fashioned oats
- 1/2 cup chopped pecans
- 1 cup semisweet chocolate chips
- 2 7-ounce jars marshmallow creme
- Chocolate Drizzle:
- 1/2 cup semisweet or bittersweet chocolate (2 1/2 ounces), chopped
- 1 tablespoon honey
- 1/2 cup heavy cream
Fancy Schmancy Chicken Salad:

Measure and mix dressing ingredients, taste and adjust seasoning if needed
- For the Dressing:
- 1 cup Mayo
- 4 teaspoons Apple Cider Vinegar
- 6 teaspoons Honey
- 1 teaspoon Poppy Seeds
- Salt and Black Pepper, to taste
- For the Salad:
- 1 small Rotisserie Chicken, shredded in to bite size pieces {approx. 4 cups}
- 2 oz Pecans, lightly toasted then coarsely chopped
- 1 cup small Red Grapes {halved if large}
- 2 Celery Stalks {with leaves}, chopped small
Apple Nacho

In saucepan, melt marshmallows and butter until creamy
- 4 large Granny Smith apples, sliced
- 35 large marshmallows
- 1/4 cup butter
- 35 caramels
- 1 Tbsp evaporated milk (or half and half)
- 1/4 cup peanuts
- 1/4 cup mini semi-sweet morsels
- 2 Tbsp chocolate syrup
- Slice apples and arrange on platter.
Jalepeno Popper Grilled cheese

On a hot grill, char the jalapenos
- 4 large jalapeno peppers
- 3-4 oz cream cheese, softened
- 4-5 green onions, minced
- Black pepper, to taste
- 4 slices Colby Jack or Cheddar Cheese
- 4 slices sourdough bread
- Butter
CHICKEN PASTA SALAD

Combine cooled chicken, chopped vegetables, and olives
- Dressing:
- 1 lb. cooked, shredded chicken (I usually use can of Costco chicken)
- 1 lb. cooked rotini noodles (or bow tie)
- 2 heads broccoli, finely chopped (the smaller the better)
- 1 red pepper, chopped
- 1 green pepper, chopped
- 1/3 onion, chopped
- 1 can sliced olives
- 1 cup shredded cheese (optional)
- 1/3 - 1/2 cup ranch dressing (don't skip this--it's what holds it all together)
- 2 envelopes dry Italian dressing mix
- 6 Tbs. apple cider vinegar
- 4-1/2 Tbs. water
- 3/4 cup oil (you can reduce this some)
