LEMON PUDDING CAKE

In large bowl whisk milk with pudding mix
- 1 box (18.25oz) lemon cake mix
- 1 box (3.5oz) instant lemon pudding mix
- 2 cup skim milk
- 11oz bag white chocolate morsels
- 12 oz Cool Whip Topping
Southwest Chicken Chop Salad

In a large bowl, stir all salad ingredients together, excluding the tortilla chips and avocado
- 2 cups diced rotisserie chicken
- 1 green pepper, diced
- 1 cup black beans
- 1 cup sweet yellow corn {canned or frozen and defrosted}
- 2 roma tomatoes, diced
- 4 scallions, washed and sliced {white and green parts}
- 1 large romaine heart, washed and chopped
- 1/2 bunch cilantro, washed and chopped
- 2 just under ripe avocados, diced
- 2 cups crushed tortilla chips
- for the dressing-
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/2 tablespoon ranch seasoning
- 1/2 tablespoon taco seasoning
- 1/2 tablespoon lime juice {optional}
- salt & pepper, to taste
Chicken Suiza Melts

Preheat the broiler. In a large skillet heat the olive oil over medium high heat
- 1 tablespoon olive oil
- 1 small red onion, chopped
- 2 cloves garlic, chopped
- Juice of 1 lime
- 1 tablespoon honey
- 1 1/2 cups tomatilla salsa or salsa verde
- 1/2 cup sour cream
- 1 rotisserie chicken, skin discarded and meat shredded
- 6 sandwich rolls, split
- 6 slices Monterey Jack cheese (I also used provolone and it was yummy)
Panera’s Stove Top Mac and Cheese

In a large stockpot, cook pasta according to package directions
- 16 oz pipette pasta or other small pasta shapes
- 4 tbsp unsalted butter
- 1/2 cup all-purpose flour
- 2 1/2 cups milk, heavy cream, or half-and-half
- 4 oz white American cheese, chopped or torn into pieces
- 8 oz extra sharp white Vermont cheddar, shredded
- 1 tbsp Dijon mustard
- 1 tsp Kosher salt
- 1/4 tsp hot sauce (like Frank’s)

- 1/4 cup worcestershire sauce
- 1/4 tsp. salt

- 1 onion, sliced into strips
- 2 tbsp. butter (or smart balance spread)
- For Assembly:
- 4 slices provolone cheese
- 4 whole wheat buns
- 2 tbsp. ketchup

- 8 chicken drumsticks, skinned
- 1 can (8 oz.) tomato sauce
- 1/2 cup soy sauce
- 1/4 cup packed brown sugar
- 2 cloves garlic, grated
- 1 tbsp cornstarch
