Cheesy Ranch Potatoes

Dice up several red potatoes into relatively small chunks
- 3 pounds red potatoes
- Ranch Dressing
- Chilli Powder
- Seasoning Salt
- Pepper
- Butter
Sausage and Cheese Breakfast Sandwiches

Bake biscuits according to package directions
- 1 can refrigerated biscuit
- 8 -10 ounces cheddar cheese
- 1 roll of pork sausage or 1 package frozen of small round sausage patty
- 1 tablespoon oil
- butter or margarine
- scrambled eggs or bacon or ham (optional)
Garlic Butter Canned Biscuits

Simply arrange the can biscuits on a cookie sheet
- 1 can biscuits
- melted butter or spray butter
- garlic salt
Island chicken

1- Combine all ingredients except chicken in a mixing bowl or large airtight plastic bag
- 1/2 cup vegetable oil
- 3 tbsp. lemon juice (orange juice worked wonderfully if you don't have lemon juice)
- 1 1/2 tbsp. soy sauce
- 1 clove garlic, minced or pressed
- 1/2 tsp. dried oregano
- 1/4 tsp. salt
- Freshly ground black pepper
- 2-4 chicken breasts
Country Chicken Noodle Casserole

If you haven't done so already, cook egg noodles and drain well
- 1 (12 oz.) package egg noodles, cooked & drained
- 2 (10 oz.) cans chunk chicken breast, drained
- 2 (10 oz.) cans cream of chicken soup, undiluted
- 1 cup mayonnaise
- 1 cup water
- 1/2 onion, finely diced
- 2 cups shredded cheddar cheese
- 1 1/2 cups frozen peas and carrots
- 1 cup panko bread crumbs
- 1 stick butter, melted
- I'm using a three cheese blend here. It has mozzarella, colby and monterey jack.

Flatbread Tacos with Ranch Sour Cream

In a small bowl, combine the sour cream, dressing mix and lemon juice; chill until serving
- 1 cup (8 ounces) sour cream
- 2 teaspoons ranch salad dressing mix
- 1 teaspoon lemon juice
- 1-1/2 pounds ground beef
- 1 can (15 ounces) pinto beans, rinsed and drained
- 1 can (14-1/2 ounces) diced tomatoes, undrained
- 1 envelope taco seasoning
- 1 tablespoon hot pepper sauce
- 1 tube (16.3 ounces) large refrigerated buttermilk biscuits
- Optional toppings: sliced ripe olives and shredded lettuce and cheddar cheese
SNOW PEA MEDLEY

In a nonstick skillet coated with cooking spray, saute onion in oil for 1-2 minutes
- 1/3 cup chopped red onion
- 2 tsp canola oil
- 1/3 cup julienned sweet red pepper
- 1/3 cup julienned sweet yellow pepper
- 1/2 cup fresh snow peas
- 1/2 cup sliced fresh mushrooms
- 1/4 tsp salt
Southern Collard Greens

Slash the ham hocks lightly with a knife
- 2 large bunches of collard greens, cleaned rinsed and chopped
- 2 pounds smoked meat (ham hocks,smoked turkey legs, wings, or smoked neck bones)
- Water to cover plus an inch
- 2 large pinches of kosher salt
- 1/2 teaspoon of Cajun seasoning (like Slap Ya Mama)
- 1 cup of chopped onion
- 3 cloves of garlic, minced
- Couple dashes of hot sauce
- 2 cups of chicken broth
- 1-2 tablespoons of sugar
- 1 tablespoon olive oil
- 2 tablespoons apple cider vinegar
- 2 tablespoons soy sauce
- 1 tablespoon of butter
- Remnants of leftover ham
- Additional chicken broth, if needed
- 1 teaspoon crushed red pepper flakes
- Hot sauce, for the table

Soft Frosted Sugar Cookies

To make the cookies, preheat the oven to 350˚ F
- For the cookies:
- 4 1/2 cups all-purpose flour
- 4 1/2 tsp. baking powder
- 3/4 tsp. salt
- 1 1/2 cups (3 sticks) butter, at room temperature
- 1 1/2 cups sugar
- 3 large eggs
- 5 tsp. vanilla extract
- For the frosting:
- 5 cups confectioners’ sugar, sifted
- 1/3 cup (5 1/3 tbsp.) unsalted butter, melted
- 1 tbsp. vanilla extract
- 7-8 tbsp. milk (plus more, as needed)
- Food coloring (optional)
- Sprinkles (optional)
Apple Cider Drumsticks

In a large resealable plastic bag, combine apple juice concentrate, cider vinegar, pumpkin pie spice and salt
- 1 (12 oz.) can apple juice concentrate, thawed
- 1/4 cup apple cider vinegar
- 1 tsp pumpkin pie spice
- 1/2 tsp salt
- 8 chicken drumsticks, skin removed
- 3/4 cup milk
- 1 tbsp flour
- 1 tbsp brown mustard
- 4 servings cooked brown rice
