Pecan Pie

I have been making this for over thirty years, I don't remember where it came from
- 4 eggs
- 3/4 cup light brown sugar
- 2/3 cup white corn syrup
- 1/4 cup melted butter
- 1/4 teaspoon regular salt
- 1 teaspoon vanilla
- 1 cup finely chopped pecans (roasted if you like)
- pecan halves to put on top
- 1 9 inch pie crust
Grilled Chicken Dijon

Very easy - one of our favorites!
- 4 boneless skinless chicken breasts
- 3 Tablespoons extra virgin olive oil
- 1 Tablespoon specialty vinegar (tarragon, balsamic, white wine or almost any kind except plain or cider)
- 1 Tablespoon Dijon style mustard (you can add more depending on your taste)
- OR
- 1/4 cup Wishbone Olive Oil Vinaigrette or Balsamic Vinaigrette Dressing
- 1 Tablespoon Dijon style mustard (you can add more depending on your taste)
Best Tuna Casserole

I'm not crazy about tuna casseroles, but Marty loves them
- 4 cups package egg noodles
- 1/4 cup chopped onion or sliced green onion
- 2 cups shredded Cheddar cheese
- 1 cup frozen green peas, thawed
- 1/3 cup chopped celery hearts (optional)
- 3 (5 ounce) cans tuna, drained
- 2 (10 1/2 ounce) cans condensed Healthy Request Cream of Mushroom Soup
- 1/2 lb. sliced mushrooms (can use 1/2 (4.5 ounce) can sliced mushrooms
- 2 tbl butter
- 1/2 Tbl lemon juice
- 1 cup crushed potato chips
Smoked Pork Loin Back Ribs

I use an electric smoker and add applewood chips
- 1 rack of Pork Loin Back Ribs
- yellow mustard
- Favorite rib rub, homemade or bought
- 1/4 cup apple juice
- 1/4 cup barbeque sauce (I like Sweet Baby Ray's)

Graham and Rollins Remoulade Sauce

I ordered Bacon Wrapped Scallops from Graham and Rollins and needed a sauce
- 1 cup mayonnaise
- 2 tablespoons whole grain mustard
- 2 tablespoons ketchup
- 1 tablespoon fresh lemon juice
- 1 tablespoon worcestershire sauce
- 1/2 cup finely chopped scallion (shallot ok)
- 1/4 cup finely chopped fresh flat leaf parsley
- 1 stalk finely chopped celery
- 2 cloves garlic, minced

Pressure Cooker Cheese Tortellini and Meatball Soup

This variation has full sized meatballs and cheese filled tortellini
- 2 tablespoons olive oil
- 1 medium yellow onion, thinly sliced
- 1 1/3 cup sliced celery (around 6 to 7 trimmed celery hearts)
- 8 cups chicken stock or broth
- 38 to 40 frozen meatballs (around 20 ounces, I use Farmrich Italian)
- 1 8 ounce bag dried cheese-stuffed tortellini
- 2 1/2 cups chopped kale or spinach
- 1 tablespoon minced garlic or 2 garlic cloves, minced
- 1 1/2 tablespoon lemon juice
- 1 1/3 teaspoon sugar
- 1 1/3 teaspoon dried basil
- 1/2 cup heavy cream

- 5 large garlic cloves
- 1 teaspoon salt
- 1/4 cup dry red wine
- 1/4 cup balsamic vinegar
- 1 tablespoon soy sauce
- 1 teaspoon honey
- 1 1/2 pounds top-round London broil (about 1 1/4 inches thick)
Fried Rice with Peas and Bean Sprouts

This takes a little time, but is well worth the effort! Not bad leftover, either
- 2 tablespoon oyster sauce
- 1/2 tablespoon soy sauce
- 1 1/2 tablespoons peanut oil or vegetable oil (divided into 1 Tbl and 1/2 Tbl)
- 2 large eggs, beaten lightly
- 1/2 cup frozen peas (preferably baby peas), thawed
- 1 medium cloves garlic, minced (about 2 teaspoons)
- 3 cups cooked white rice (cold), large clumps broken up with fingers
- 3 medium scallions, sliced thin (about 1/2 cup)
- 1/2 cup bean sprouts (can use canned)
