Orange Marinade

Very good with chicken and seafood
- 1/4 cup of orange juice
- 3 tablespoons lime juice
- 3 tablespoons vegetable oil (I use cannola)
- 1 tablespoon honey
- 1 garlic clove finely chopped
- 1/8 teaspoon black pepper or to taste
- optional ingredients for a more complex flavor
- 1/4 cup soy sauce
- 1 teaspoon fresh minced ginger
- 2 teaspoon sesame oil
Marsala Sauce

Directions Add olive oil to heavy hot saucepan
- 3 tablespoons olive oil
- 1/4 cup onion, diced
- 1 tablespoon garlic, chopped
- 1/2 pound mushrooms, sliced
- 3 tablespoons flour
- 1/2 cup Marsala wine
- 1 1/2 cups beef stock
- Salt and pepper, to taste
Guinness Beef Short Ribs

This adapted from a Food Network recipe
- 3 tablespoons extra-virgin olive oil
- 4 pounds boneless beef short ribs, cut into 1 1/2-inch pieces
- Kosher salt and freshly ground black pepper
- 1 large yellow onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, cut into 1/2-inch pieces
- 4 large carrots, coarsely chopped (optional)
- 2 cups low-sodium beef stock, divided
- 1-pint stout beer (I use Guinness)
Navy Bean Soup

Old Fashion Bean Soup. This is one of the first soups I learned to make
- 1 pound navy beans, picked over, rinsed and drained
- 10 sprigs parsley
- 2 sprigs fresh thyme or rosemary
- 1 bay leaf
- 2 large smoked ham hocks, about 1 1/2 pounds
- 1 medium onion, coarsely chopped
- 1 clove garlic, coarsely chopped
- 8 cups of cold water
- 1 medium carrot, coarsely chopped
- Kosher salt and freshly ground black pepper
Cajun Broiled Shrimp

Preheat the oven to 400 degrees F
- 2 garlic cloves
- 2 teaspoons salt
- 1 teaspoon cayenne
- 2 teaspoons paprika
- 2 tablespoons lemon juice
- 4 tablespoons extra virgin olive oil
- 2 pounds (16/20 count) raw shrimp, peeled and deveined
- ground black pepper

Lemon and Oregano Lamb Loin Chops

These are yummy! 6 to 7 minutes on the grill and you're done!
- 1 1/2 to 2 pounds lamb loin chops, sliced 1 1/4 inch thick
- 6 tablespoons fresh lemon juice (approx. 2 lemons)
- 1 tablespoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon fresh ground black pepper
- 1 teaspoon salt

This is a wonderful way to take some of the last-minute pressure off your Thanksgiving meal
- For Turkey Stock
- vegetable oil
- 4 to 5 pounds turkey parts, necks, backs and wings
- 1 package of giblets or gizzards (optional)
- 2 medium onions, quartered with skins
- 2 medium carrots, cut in thirds
- 2 celery ribs, cut in thirds
- 6 garlic cloves, unpeeled
- 1 bottle dry white wine, divided in half
- 1 cup water
- 8 cups chicken stock
- 6 sprigs fresh thyme
- 6 fresh sage leaves
- 10 peppercorns
- To make 6 cups gravy
- 6 cups of warm stock
- 6 tablespoons fat and/or butter
- 6 tablespoons flour

- 1 (7-pound) semi-boneless leg of lamb, aitchbone removed, fat trimmed to 1/4-inch thick, and lamb tied
- 8 garlic cloves
- 1 cup flat-leaf parsley
- 1/4 cup fresh mint leaves
- 2 teaspoons lemon zest
- 2 lemons, juiced
- 1 tablespoon kosher salt
- 1 teaspoon freshly ground black pepper
- 1/2 cup olive oil
- 16 oz carrots ( or baby carrots) cut in 1/2 inch pieces
- 1 large onion cut in 1/2 inch pieces
- 2 large parsnips cut in 1/2 inch pieces
- 3-4 red or yellow potatos cut in 1/2 inch pieces
- 2 medium turnips cut in 1/2 inch pieces
