Tomato Cucumber and Feta Salad with Balsamic Glaze

This is a simple salad. Instead of buying the glaze, make this 2 ingredient one and store the extra
- Balsamic Glaze
- 1 cup balsamic vinegar
- 6 tablespoons maple syrup, honey or brown sugar
- Salad
- 1 large cucumber, peeled and cut into 1/8-inch slices
- 1 small red onion, cut into thin slices, about 1/4 cup
- 4 tablespoons feta cheese, crumbled (I use Athenos)
- 2 cups cherry tomatoes, sliced in halves or thirds
- Crumbled Bacon 2 slices per salad (optional)
Cole Slaw Topping for Pulled Pork Sandwiches

Combine the cabbage mix and red onions in a large bowl
- 1 - 14 to 16 ounce package of coleslaw mix with carrots
- 1/4 red onion, finely sliced
- 6 tablespoons mayonnaise
- 1 1/2 tablespoons cider vinegar
- 1 tablespoon sugar
- 1 teaspoon sour cream
- 1 teaspoon Dijon Mustard
- Salt and freshly ground black pepper
Roasted Asian Pork Loin

Preheat oven to 375 Tie roast, if preferred
- 3 to 3 1/2 lb Boneless Pork Loin
- Salt and Pepper
- 1/2 cup bottled Italian Dressing (I use Robusto Italian)
- 1/2 cup honey
- 1 teaspoon ground ginger
- 1 tablespoon Hoisin Sauce
- 2 teaspoons soy sauce
- 1 teaspoon Dijon Mustard
- 1/2 teaspoon garlic powder
- 1/4 teaspoon Chinese Five Spice Powder
- Anchovy Paste (optional)
Simple Chicken Salad

I make this with leftover grilled chicken breast
- 1 1/2 cups cubed cooked chicken breast (2 medium)
- 1/4 cup of mayonnaise (may need to add more)
- 1/4 cup sour cream (may need to add more)
- 1/4 teaspoon dijon mustard or to taste
- pinch of curry powder
- salt and pepper to taste
- optional
- 1/2 cup quartered red or green grapes
- 1/2 cup diced celery
- 1/4 cup chopped walnuts (I prefer toasted)
Ultimate Coffee Cake

The night before place frozen rolls in well greased Bundt pan
- 16 to 18 unbaked frozen dinner rolls
- 1 (3-ounce) package regular butterscotch pudding mix, not instant
- 1/2 cup brown sugar, packed
- 1/2 cup pecans, chopped
- 1 stick (1/2 cup) butter, melted
Dijon Vinaigrette Marinade

This is a great marinade for fowl, seafood, pork, beef and lamb
- 3 Tablespoons extra virgin olive oil
- 1 Tablespoon specialty vinegar (tarragon, balsamic, white wine or almost any kind except plain or cider)
- 1 Tablespoon Dijon style mustard (you can add more

Pasta Fagioli With Italian Sausage

This is adapted from several different recipes
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, finely chopped
- 1 cup carrot, peeled & chopped
- 1 cup stalk celery, chopped
- 1 cup chopped zucchini
- 1 lb hot Italian sausage, crumbled
- 1 teaspoons dry oregano
- 1 tablespoon dry basil
- 1 teaspoon red pepper flakes
- 1 can diced tomatoes with juice
- 3 -4 cups chicken or vegetable stock
- 2 cans cannellini beans
- 1 cup ditalini
- 2 tablespoons chopped flat leaf parsley
- 2 sprigs rosemary (optional)
- parmesan cheese
Marinated Cocktail Shrimp

This is an easy and excellent way to spice up cooked shrimp you buy at the seafood counter or freezer
- 1 lb frozen tail-on cooked shrimp (about 30-38 or bigger)
- 3 tablespoons dry sherry
- 2 tablespoons lime juice
- 1/4 teaspoon seasoning salt, to taste (such as Johnny's or Lawry's)
- fresh ground black pepper, to taste
- 1/4 teaspoon dried ancho chile powder or 1/4 teaspoon other chili powder, to taste
- 1/2 teaspoon seafood cocktail sauce
- seafood cocktail sauce, your favorite kind, for dipping

- Ingredients
- 4 1/2 c fresh carrots, finely shredded
- 1 can(s) pineapple, crushed (8 oz.) or 2/3 cup
- 3/4 c raisins
- 1/2 c mayonnaise
- 1/2 c sugar & 2 tablespoons
- 1 1/4 Tbsp fresh lemon juice

- 1 - 3 to 4 pound pork loin roast
- 1/4 teaspoon pepper
- 2 cans regular cola
- 1 packet powdered onion soup mix
- 2 pounds baby carrots (optional)
- 1 tablespoon cornstarch mixed into 2 tablespoons water (optional)
