Basic Poached Chicken

This is easy to make. I always have boneless skinless chicken breasts in the freezer
- 4 to 6 boneless skinless chicken breasts
- 1 teaspoon kosher salt
- 1 medium onion quartered from root end (this keeps it from falling apart)
- 2 smashed garlic cloves (optional depending on chicken use)
- 1 bay leaf
- 1 teaspoon peppercorns
- water or chicken stock/broth to cover
Hash Brown Crust Breakfast Casserole

Try different cheeses. Emmentaler? or gruyere and cheddar with ham or cured meats (bacon, ham, pancetta, prosciutto...
- 6 cups shredded hash browns
- 1/2 c butter, melted
- salt & pepper to taste
- 2 cups (16 ounces) cooked Italian sausage
- 1/2 cup green onions, diced (or 1/2 cup diced onion)
- 1 cup cheddar cheese, shredded
- 1 cup monterey jack cheese, shredded
- 10 eggs
- 1/2 cup 2% milk
- 1/2 cup heavy cream
- 1/2 teaspoon garlic powder (next time increase to 1 teaspoon or use 2 garlic cloves, minced)
- Optional
- 2 cups broccoli florets
- 1 cup red or green pepper, diced
On the Border Guacamole

This 160-unit casual Mexican chain makes a nice tableside guacamole that you can easily duplicate for your amigos
- 2 medium ripe avocados, chilled
- 1 lime wedge
- 1 tablespoon chopped red onion
- 1/2 tablespoon minced jalapeno
- 1 tablespoon chopped cilantro
- 2 tablespoons diced tomato
- 1/8 teaspoon salt or to taste
Bacon Grilled Cheese

- 2 slices Oscar Mayer cooked bacon
- 1 tablespoon butter, room temperature
- 2 slices white sandwich bread
- 3 slices Kraft Singles
