  • Bacon Wrapped Chicken
  • I love this bacon wrapped chicken. It's tasty and makes a beautiful presentation when sliced and served.
  • 3 •3 boneless chicken breasts
  • 1 package •1 package bacon
  • 1 8 8 package •1 8 ounce package cream cheese
  • 3 •3 jalapeno peppers
  • •salt, pepper, garlic powder or other seasonings (I use Montreal Steak Seasoning)
  • Directions:
  • to to chicken breast in half lengthwise to make two thin pieces. If still not thin enough, pound out to make thinner.
  • Cut each jalapeno in half lengthwise (de-seed and de-vein for less heat if you choose - I personally don't.)
  • 35-45 375 45 cooked outside on the grill for 35-45 minutes or so. They also can be cooked in a 375 oven for 45 minutes or until chicken is cooked through. The bacon will be crisp on the outside.
  • These are yummy! We've been making them long before I was low carb, so yes, everyone will love them.

  • 16 Ellie's Peanut Butter Cookies, crushed
  • 4 tablespoons butter, melted
  • 2:
  • 4 ounces cream cheese, softened
  • 1/4 cup sugar free peanut butter
  • 1/2 3/4 granulated Splenda or 3/4 teaspoon liquid Splenda
  • 1/2 teaspoon vanilla
  • 1/2 cup heavy cream, whipped
  • Beat cream cheese, peanut butter, sweetener and vanilla; gently fold in whipped cream. Spread over chilled crust. Chill well before topping with pudding.
  • 3:
  • 1 batch Chocolate Pudding with Carb Countdown Milk, cooled
  • 4. spread over peanut butter layer; chill well before adding Layer 4.
  • 4:
  • 1 cup heavy cream, whipped
  • 1 12 Splenda or 12 drops liquid Splenda
  • 1 tablespoon peanuts, finely chopped
  • Grated sugar free milk chocolate, optional
  • to the Splenda to the whipped cream; carefully spread over pudding layer. Sprinkle with chopped peanuts and grated chocolate, if using. Chill several hours before serving.
  • 9 9 servings
  • Can be frozen
  • With granular Splenda:

  • Stuffing Casserole
  • 1 1/2-2 lb boneless, skinless chicken breasts, cooked and cut into bite sized pieces
  • 2 (10 3/4-ounce) cans Campbells cream of chicken and mushroom soup (15 carbs)
  • 1/2 cup butter, 1 stick, melted
  • 2 cups chicken stock
  • 8 slices simple white bread carbquik version, cubed and dried (16 carbs)
  • 1/2 tsp seasoning salt
  • 1/2 c shredded parmesan cheese (2 carbs)
  • 1/4 cup grated parmesan cheese (1 carb)
  • Spread cooked chicken pieces in bottom of a 9 x 13 baking dish.
  • In a mixing bowl combine soup and 1 cup chicken stock and spread evenly over chicken.
  • In a mixing bowl combine butter, bread, 1 cup chicken stock, seasoning salt, and cheese until well mixed and spread evenly over soup and chicken.
  • Bake in a preheated 350 degree oven for 35-40 minutes until stuffing is golden brown.
  • Makes 8 servings @ 4.25 carbs each.
  • Everybody loved this one.

  • Preparation Instructions
  • Refrigerate salsa for at least an hour. Serve with tortilla chips or cheese nachos.

  • Mixture of:
  • LC Chicken Chow Mein
  • 1 1 13.25 pound (or the new 13.25 oz box) Dreamfields Spaghetti Noodles
  • 5 5 5 green onions, sliced
  • 1/2 1/2 1/2 cup carrots, matchstick style
  • 4 4 4 cups chopped Napa (Chinese) cabbage
  • 1 1 1 boneless, cooked & diced chicken breast (if desired)
  • 1 1 1 cup chopped celery
  • 1 1 1 tsp + fresh ginger (I used jarred or the stuff in a tube, in the produce)
  • 2 2 2 cloves chopped garlic
  • 1 1 1 Tbsp Olive Oil
  • 1 1 1 Tbsp Sesame Oil (or Peanut oil...or any oil you fancy)
  • 3 3 3 + Tbsp Soy (I like low sodium)
  • 1 1 1 Tbsp Splenda
  • 2 2 2 Tbsp Sake or Dry Sherry
  • 1 1 1 tsp Red Chili Flakes (if desired, doesn't make it really hot, just a kick)
  • 1 1 1 + Tbsp Oyster Sauce (if desired)
  • 5-spice Soy Sauce, Splenda, sake / sherry, Chili Flakes (or Chinese 5-spice if you prefer) and Oyster sauce. Whisk together and set aside.
  • 2-minutes. 3-4 to Sesame oil for 2-minutes. Add in shredded or chopped Napa Cabbage, celery, carrots and green onions and saute for about 3-4 minutes, or until the cabbage has just wilted. Remove to bowl and wipe wok with paper towel.
  • 2-minutes, to 2-minutes. in wok. Add reserved noodles, cooked chicken breast and veggies. Wok it for about 2-minutes, add in the Soy Sauce mixture and continue to wok on high for about 2-minutes.
  • DP said he would like just a little more Soy. I don't like lo mein, or "wet" noodles. If you prefer yours wetter, just add in some chick broth with the noodles.
  • to was really good, and honestly tasted like the real thing (used to love Panda Express in a former life).
  • I served this with a simple Broccoli Beef...very easy...and you can see my kitchen helper in the pics. He's waiting for his cooked bone, from the steak, for the Broccoli Beef...LOL

  • I have been experimenting with some chinese dishs and came up with a fairly LC Hoisin Sauce (approx 1 carb per T.).
  • makes 1/4 cup.
  • Very tasty.
  • 1 T. sf peanut butter
  • 2 T. soy sauce
  • 1 t. DiabetiSweet brown
  • 1 t. balsamic vinegar
  • 1 t. sesame oil
  • 10 drops franks red hot
  • pinch garlic powder
  • pinch black pepper
  • Combine all ingredients in a jar and shake until completely incorporated.

  • ■1 clove (to 2 Cloves) Garlic
  • ■Salt To Taste
  • ■¼ cups Italian Flat-leaf Parsley
  • ■2 Tablespoons Fresh Chives
  • ■1 cup (Real) Mayonnaise
  • ■½ cups Sour Cream
  • ■Buttermilk (as Needed To Desired Consistency)
  • ■White Vinegar (optional, To Taste)
  • ■Worcestershire Sauce, To Taste (optional)
  • ■Fresh Dill (optional, To Taste)
  • ■Cayenne Pepper (optional, To Taste)
  • ■Paprika (optional, To Taste)
  • ■Fresh Oregano (optional, To Taste)
  • ■Tabasco (optional, To Taste)
  • Preparation Instructions
  • Mince the garlic with a knife and then sprinkle about an 1/8 to ¼ teaspoons of salt on it and mash it into a paste with a fork. Chop the parsley, chives and any of the optional herbs very finely and add to the garlic.
  • In a bowl combine all ingredients, adding other optional ingredients as you wish, tasting frequently and adjusting seasonings as needed. Chill for a couple of hours before serving, thin with milk or buttermilk if desired

  • Hello All!
  • DH said I have to post this recipe, he is in love with it and wants everyone to know about it!! (Blush!) It is soooo simple and really very good, if I say so myself. LOL
  • Cooled pie crust of your choice. There are several great ones in the recipe and BB posts on here.
  • One package SF and FF Vanilla pudding mix
  • 3/4 cup low carb or FF milk of your choice
  • 1 small package of Kool-aid brand lemon-aide mix. (the kind you would have to add sugar to)
  • The juice of half a small lemon
  • Whip milk, pudding mix, lemon-aid mix and lemon juice together in bowl for 2 minutes.
  • Pour into cooled pie crust and refridgerate for 1 hour, or until cold and set. Cut into slices and add a dollop of whipped cream on top.
