  • to to Jennifer is great at coming up with low carb bake mixes, and she's been kind enough to give me permission to publish one here. So here goes!
  • SPLENDID LOW-CARB BAKE MIX™
  • 12/3 cups ground almonds (400 mL)
  • 2/3 cup vanilla whey protein* (150 mL)
  • 2/3 cup vital wheat gluten (150 mL)
  • 80%, 75% 80%, however 75% will work
  • well in most recipes. Bob’s Red Mill
  • vital wheat gluten (75%) is very good

  • to as Low-Carb Bake Mix in recipes.
  • to the application for this bake mix is for a savory baked product, it is possible to replace vanilla whey protein powder with natural whey protein powder.
  • Ground hazelnuts or pecans may be used instead. This bake mix is useful for piecrusts, muffins, loaves, many cakes, cookies and squares, some cooking applications and it guarantees lower carbs as well.

  • sub:
  • lc cake and cookie flour mix (carbalose version)
  • add:
  • 1/2 cup sf sweetened dried cranberries
  • 1/4 cup chopped pecans
  • 1/2 tsp splenda quick pack (1 tsp total)
  • I made as before except I added the cranberries and pecans to the last minute of the knead process.
  • I got a much better rise from the carbalose version of the flour mix.
  • I will report taste and texture when it cools.

  • Ingredients
  • 2 quarts vegetable oil for frying
  • 8 (4 ounce) fillets cod
  • salt and pepper to taste
  • 1 cup all-purpose flour
  • 2 tablespoons garlic powder
  • 2 tablespoons paprika
  • 2 teaspoons salt
  • 2 teaspoons ground black pepper
  • 1 egg, beaten
  • 1 (12 fluid ounce) can or bottle beer
  • Directions
  • 1 .Heat oil in a deep fryer to 365 degrees F (185 degrees C). Rinse fish, pat dry, and season with salt and pepper.
  • 2 .Combine flour, garlic powder, paprika, 2 teaspoons salt, and 2 teaspoons pepper. Stir egg into dry ingredients. Gradually mix in beer until a thin batter is formed. You should be able to see the fish through the batter after it has been dipped.
  • 3 .Dip fish fillets into the batter, then drop one at a time into hot oil. Fry fish, turning once, until both sides are golden brown. Drain on paper towels, and serve warm

  • 8 8×8 12 pan 12 servings
  • 1 1 1 cup unsatled butter
  • 6 6oz 6oz unsweetened chocolate(I just used bakers brand, you can get at any grocery store, its the blue box)
  • 1/4 1/4 1/4 cup unsweetened dutch process cocoa powder
  • 4 4 4 eggs
  • 1 1/2 1 1/2 1/2 cup splenda
  • 1 1 1 teaspoon pure vanilla extract
  • 1/2 1/2 1/2 teaspoon baking powder
  • 1/8 1/8 1/8 teaspoon salt
  • 2/3 2/3 2 cup whey protein powder( I use vanilla and this equals 2 scoops.. I don’t know how other brands work..I only have used one brand ever.. LeanFit Whey Protein Powder )
  • to 350F to 350F
  • 8×8” one 8×8” baking pan & line with parchment
  • to 8-10 bowl, add eggs, splenda & vanilla. Mix on HIGH speed until mixture comes to the pale yellow stage(mixture will be thick ).. this takes about 8-10 minutes
  • to to mixture by added a little of the chocolate mixture to it quickly mixing by hand to make sure your eggs don’t cook.. then fold in rest of chocolate mixture(do not over mix)fold in whey & baking powder(and salt if you used unsalted butter)
  • 8×8” into your greased 8×8” pan evenly
  • 350F 16-18 350F for 16-18 minutes.

  • Prep Time: 5 mins
  • Total Time: 35 mins
  • 1 In heavy-bottomed sauce pan, saute onions in corn oil until they begin to brown.
  • 2 Add garlic and cook another 2 minutes.
  • 3 Stir flour in with onions and garlic so that it thickens.
  • 4 Add chopped chilies, beef broth and salt and mix well.
  • 5 Bring to a boil and simmer 10 to 15 minutes to allow mixture to reduce.
  • 6 The sauce should be thick enough to bind chilies and onions together.
  • 7 Sauce can be refrigerated for three days, or frozen
