  • Beef Lettuce Cups
  • 12 12 12 oz. rump steak
  • 2 2 2 tablespoons light soy sauce
  • 1 1 1 tablespoon dry sherry
  • 1 1 1 pc fresh ginger, peeled & grated
  • 1 1 1 clove garlic, crushed
  • 2 2 2 pinches of five-spice powder (or Mrs. Dash)
  • 1 1 1 teaspoon chili sauce
  • 1 1 1 tablespoon oil
  • 6 6 6 green onions, sliced diagonally
  • 1 1 1 small red pepper, seeded & diced
  • 8 8 to crisp lettuce cups, to serve
  • to Sprigs of parsley, to garnish
  • to 2-3 mixture to pan and stir-fry for 2-3 minutes, stirring all the time. Turn mixture into a warm serving dish. Serve at once with chilled lettuce cups, garnished with sprig of parsley.
  • To serve, simply spoon beef mixture into lettuce cups and eat with the fingers. Serve with plenty of napkins or finger bowls — it can be a little messy.

  • 1 lb ground beef
  • 1/2 cup chopped onion
  • 2 cups shredded cheddar cheese
  • 1 (20 ounce) can enchilada sauce
  • 8 flour tortillas
  • Change Measurements: US | Metric
  • Directions:
  • Prep Time: 10 mins
  • Total Time: 40 mins
  • 1 Brown meat and onions in large skillet.
  • 2 Add 1 cup enchilada sauce and 1 cup cheese.
  • 3 Mix well.
  • 4 Put filling along center of each tortilla.
  • 5 Roll up and place seam side down in a 9x13 pan.
  • 6 Pour remaining sauce over.
  • 7 Sprinkle remaining cheese over.
  • 8 Bake at 350F degrees for about 30 minutes till cheese is bubbly.

  • 1 cup shredded cauliflower
  • 1 cup shredded turnip
  • 1 teaspoon salt, or Vege-Sal
  • 3 eggs
  • 1/4 cup Ketatoes mix, original flavor
  • 1/4 cup Atkins bake mix
  • 1 medium onion, grated
  • 1/2 teaspoon pepper
  • 1. to want to shred your cauliflower and turnip on the
  • shredding blade of your food processor. Combine the two in a bowl, and sprinkle the salt over the two, stirring as you do so, so the salt is well distributed. Let the salted cauliflower and turnip sit for at least an hour, and two won't hurt.
  • 2. to come back to your shredded cauliflower and turnip, and dump them into a strainer. Using clean hands, squeeze all the moisture you can out of them. Put them back in the bowl.
  • 3. to your onion, and add it to the cauliflower and turnip. Now add onion, then the eggs, Ketatoes mix, Atkins bake mix, and pepper. Using a whisk or a fork, stir everything together until it's all well-combined. The mixture will be quite thick.
  • 4. Put your large, heavy-bottomed skillet over medium high heat.

  • 2 tablespoons sesame seeds
  • 1 tablespoon poppy seeds
  • 1/2 cup white sugar
  • 1/2 cup olive oil
  • 1/4 cup distilled white vinegar
  • 1/4 teaspoon paprika
  • 1/4 teaspoon Worcestershire sauce
  • 1 tablespoon minced onion
  • 10 ounces fresh spinach - rinsed, dried and torn into bite-size pieces
  • 1 quart strawberries - cleaned, hulled and sliced
  • 1/4 cup almonds, blanched and slivered
  • Directions
  • 1 .In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, olive oil, vinegar, paprika, Worcestershire sauce and onion. Cover, and chill for one hour.
  • 2 .In a large bowl, combine the spinach, strawberries and almonds. Pour dressing over salad, and toss. Refrigerate 10 to 15 minutes before serving

  • OMG, you will love this recipe. I had a friend give me some blueberries and I was so in the mood for a cobbler or a pie. Well a cobbler is faster and easier then a pie-so WA LA!

  • 1 lb ground beef
  • Worcestershire sauce, to taste
  • 3 tablespoons breadcrumbs
  • oregano, to taste
  • 1 egg, slightly beaten
  • salt and pepper, to taste
  • 1 clove garlic, minced
  • 2 tablespoons vegetable oil
  • For the sauce
  • 1 tablespoon vegetable oil
  • 1/2 cup onion, chopped
  • 3/4 cup brown sugar, packed
  • 2 tablespoons vinegar
  • 1 teaspoon lemon juice
  • 1 cup ketchup
  • 2 tablespoons soya sauce
  • Change Measurements: US | Metric
  • Directions:
  • Prep Time: 30 mins
  • Total Time: 2 1/2 hrs
  • 1 For meatballs: Mix all ingredients (minus oil) together. Form into balls. Fry in oil until golden then place on paper towel to drain. Set aside
  • 2 For Sauce: In medium saucepan, fry onion in oil until tender. Add all other sauce ingredients and simmer 20 minutes. Add meatballs and cook 1 hour on medium. Serve and Enjoy!
  • 3 *You can also place browned meatballs and sauce mix into crock pot.

  • 1/2 1/2 3 cup fresh lime juice, about 3 limes
  • 1 1 1 Tbsp. lime zest
  • 1/4 1/4 1/4 cup tequila, your favorite white or gold
  • 1 1/2 1 1/2 1/2 tsp. Mexican oregano, or whatever is available
  • 1 1 1 Tbsp. cumin seeds, toasted and smashed
  • 1 1 1 Tbsp. coriander seeds, toasted and smashed
  • 1 1 1 1 to2 dried chilies such as chile de arbol, toasted or 1 jalapeno, diced
  • 3 3 3 cloves garlic, smashed
  • 1/4 1/4 1/4 cup fresh cilantro, stems and leaves, lightly crushed
  • 16 16 16 ounces skirt steak, or substitute flank steak if preferred
  • 8 8 8 Tbsp. Ancho Red Chile Barbecue Sauce (recipe below)
  • 1 1 1 cup onions, sliced
  • 1 1 1 cup green bell pepper, sliced
  • 1 1 1 Tbsp. canola oil
  • 4 4 4 - low carb flour tortillas, optional (you can use lettuce wraps also)
  • 2 to marinade ingredients in a zip top bag and marinate steak at least 2 hours to overnight in the refrigerator. The longer you marinate the beef the stronger the flavors will be.
  • While the steak is resting saute the onions and green bell peppers in the canola oil in a large saute pan on high heat until tender and caramelized.
  • Assemble fajitas in low carb tortilla or lettuce wrap if desired and garnish with vegetables and serve additional Ancho Red Chile Barbecue Sauce if preferred.

  • Here's an easy recipe to help you try out the fresh basil. If you leave out the green beans, it becomes a caprese salad - and there are lots of recipes for making caprese salad and they're all good. And it's the fresh basil that makes people love it.
  • Green Bean and Mozzarella Salad
  • 2 cups cut fresh green beans (2-inch pieces)
  • 6 plum tomatoes, sliced
  • 1 block (8 ounces) mozzarella cheese, cubed
  • 1/2 cup Italian salad dressing
  • 1/3 cup minced fresh basil
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • Place beans in a small saucepan and cover with water. Bring to a boil; cook, uncovered, for 6-8 minutes or until crisp-tender. Drain and rinse in cold water.
  • Place beans in a large salad bowl. Add the remaining ingredients; gently toss to coat.
  • Cover and refrigerate for 1 hour before serving.

  • Adapted from The Almond Flour Cookbook by Elana Amsterdam
  • Ingredients
  • 1 1/2 C. Unblanched Almond Flour
  • 1 Large Organic Pastured Egg
  • 1 Tbsp. Extra Virgin Olive Oil
  • 1/2 tsp. Celtic Sea Salt
  • 1/2 tsp. Rumford Aluminum Baking Powder
  • Directions
  • 1 . Preheat oven to 350°F . Set aside large baking sheet.
  • 2 . Cut 2 pieces of parchment paper the size of baking sheet.
  • 3 . Combine dry ingredients first then add egg and olive oil. Mix with a fork until it comes together into a ball.
  • 4 . Place dough between parchment paper and with a rolling pin, roll to about 1/8 inch thick.
  • 5 . Remove top piece of parchment and set crust along with the bottom piece of parchment onto baking sheet.
  • 6 . Bake 15-20 minutes or until lightly browned.
  • 7 . Remove from oven, add toppings and return to oven to warm
