- Here's what I got when I tripled the dry ingredients and then tripled again.
- Fantastic Flour Mix X 3
- 1/4 cup + 2 tablespoons Oat Fiber
- 1/4 cup + 2 tablespoons Coconut Flour
- 3 tablespoons Protein Powder
- 3 tablespoons Egg White Powder
- 1 1/2 teaspoons Baking Powder
- 1 1/2 teaspoons Glucommanan

- Fantastic Flour Mix
- 1 cup Oat Fiber + 2 tablespoons Oat Fiber
- 1 cup Coconut Flour + 2 tablespoons Coconut Flour
- 1/2 cup + 1 tablespoon Protein Powder
- 1/2 cup + 1 tablespoon Egg White Powder
- 1 tablespoon + 1 1/2 teaspoons Baking Powder
- 1 tablespoon + 1 1/2 teaspoons Glucommanan

- A really healthy chicken marsala.
- Ingredients1/2 oz sour cream, light
- 1 tsp ground oregano
- 1 dash pepper
- 1 dash sea salt
- 1 tbsp olive oil
- 2 breasts, bone and skin removed chicken breast
- 1 cup pieces or slices mushrooms
- 1/2 cup sliced onions
- 4 oz marsala wine
- Directions1.Cut the chicken into 2 1/2 to 3" pieces (almost like half a chicken tender).
- 2 .Put olive oil into a large skillet pan and heat up to medium-high.
- 3 .Add chicken pieces to the hot pan and sprinkle with ground oregano (flakes will work but the taste is a bit better with ground), sea salt and pepper. Cover and let sauté for about 3 minutes.
- 4 .Turn the chicken pieces over, add the mushrooms and onions tucked all around the chicken pieces. Sprinkle whole dish with remaining oregano, sea salt and pepper. Cover and let sauté for another 4 minutes or so.
- 5 .Stir until all onions, mushrooms and chicken appear to be tender, usually about a total of 7-8 minutes.
- 6 .Turn down to about medium heat and add the marsala wine, give it a rapid simmer for another 5 minutes. Add 1 tablespoon of low fat sour cream, stir in, cover and take the dish off the burner to allow to cool some.
- 7 .Note: I made this recipe to mock Olive Gardens chicken marsala without the flour and adding a little something extra to make up for not having rice or pasta!

- Oatmeal Cookies
- 1 C. coconut oil
- 1 C butter,at room temp
- 1 1/2 c splenda
- 1 tsp molasses
- 2 eggs
- 1 C ground almonds
- 1 cup vanilla flavored whey protein powder
- 1/2 tsp salt
- 1 tsp baking soda
- 1 tsp cinnamon
- 1 C rolled oats
- 1 C chopped pecans
- Preheat oven to 350
- with an electric mixer, beat together the coconut oil and butter and splenda until well combined ,creamy and fluffy.
- Beat in molasses and eggs, combine well.Add protein powder,almonds,salt and baking soda. make sure well combined.
- Beat in cinnamon,rolled oats and pecans.
- spray a cookie sheet with nonstick cooking spray. Drop dough by scant tablespoonsful. leavie plenty of roomfor spreading.
- Bake for 10 minutes or till golden . cool on a wire rack.
- Yields about 5 doz "outrageously good cookies" with 3 gm of carbohydrates,trace fiber and 4 gm of protein

- 4 4 4 tsp xanthan
- 4 4 4 Tbsp baking soda
- 3 3 3 tsp cream of tartar
- 1/2 used 1/2 cup of this mix and I wish I had not made this much at one time without testing it.
- 2:
- 1/2 1/2 1/2 cup Dried egg white powder
- 2 2 2 tsp Xanthan gum
- 2 2 2 tsp Baking Soda
- 2 2 2 Tbsp Vinegar
- 3:
- 1/2 1/2 1/2 cup Dried egg white powder
- 2 2 2 tsp Xanthan gum
- 2 2 2 tsp Baking Soda
- 2 2 2 tsp Cream of Tartar
- 4:
- 1/2 1/2 1/2 cup Dried egg white powder
- 2 2 2 tsp Xanthan gum
- 2 2 2 tsp baking powder
- 4! all baked up nice and tall and the texture was just fine. There were three fails though! And the winner is Test 4!
- 3 4 three all have a funky mediciney smell and taste bitter and soapy. My husband thought test 3 was passable. I found all but test 4 inedible.
- for those of you who have to know..... the recipe that works well is:
- 1/2 1/2 1/2 cup Dried egg white powder
- 2 2 2 tsp Xanthan gum
- 2 2 2 tsp baking powder
- to now you know And hopefully won't waste ingredients trying to figure it out too. Hope that helps someone else out there.

- In mixing bowl
- 1-lg egg white
- 1 1/2 tsp water
- 1 1/2 tsp. vanilla (optional)
- Whisk to a froth
- 3/4 cup Splenda granular
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 3 cups nuts
- Mix it well
- Spread nuts out on cookie sheet lined
- with parchment paper.
- Bake 300 degrees for 20-25 minutes
- Turn half way through
- Walnuts, almonds, pecans are wonderful.
- Any other recipes for candied nuts appreciated
Raspberry Ribs

- Raspberry Glaze:
- RASPBERRY SPARERIBS
- These are restaurant-style delicious.
- 4 lbs pork side spareribs (1.8 kg)
- 1/2 cup Splenda Ketchup, page 89 (125 mL)
- 1/4 cup raspberry fruit spread, (50 mL)
- sieved
- 2 tsp Worcestershire sauce (10 mL)
- 2 tsp white vinegar (10 mL)
- 1 tsp prepared mustard (5 mL)
- 1/2 tsp Liquid Smoke, optional (2 mL)
- Cut spareribs into manageable sizes. In large pot of boiling water, boil ribs gently 1 hour. Place ribs in 9 x 13-inch (23 x 33 cm) glass baking dish. Brush both sides with Raspberry Glaze and allow to marinate in refrigerator 1 hour, if possible.
- Raspberry Glaze: In medium bowl, combine Splenda Ketchup, page 89, raspberry fruit spread, Worcestershire sauce, vinegar, prepared mustard and Liquid Smoke, if using.
- Grill ribs uncovered over medium coals, until well-browned both sides, about 8 minutes per side. Baste with Raspberry Glaze as needed.
- Helpful Hints: Pressure cooking the ribs or doing them in a crock pot first would work as well, plus it would cut down on the odor of boiling the spareribs for so long. Do use the extractor fan when boiling these spareribs.
