- Mmmmmm, chocolate!
- You'd never notice that the recipe uses Peanut flour instead of white flour in this recipe, besides the awesome flavor. The peanut flour creates a soft, dense, fudgy outside with an explosion of chocolaty goodness on the inside.
- 6 ounces dark chocolate ChocoPerfection Bar or Simply Lite Bar
- 2 eggs
- 1/4 cup vanilla almond milk
- 1 stick unsalted butter
- 2 egg yolks
- 1/3 cup Truvia
- 1/2 tsp vanilla extract
- 1/4 cup peanut flour
- To make centers, melt 2 ounces of chocolate and vanilla almond milk in double boiler. Whisk gently to blend. Refrigerate about 2 hours or until firm. Form into 6 balls; refrigerate until needed.

- Who has the exact method to make it nice and fluffy? Do you use a potato ricer? Do you let cool and dry before ricing? Do you grate it first with a box grater?
- Hoping for some advice from all of you cheffies.

- Start Date: June, 2009 I would say the number one thing is to use fresh cauliflower. The frozen stuff won't be "fluffy."
- The second thing is to know you have a continuum from fluffy/hard to mushy. If you want it really soft, it's not going to be fluffy. Cook it less if you want to avoid that mushiness.
- I have tried several techniques and far prefer grating in the food processor with the regular shredding blade.
- Also, microwaving with no added water works well to avoid mushiness.
- If you want to add fat, wait till it's done and toss it while hot.
- Oh, rereading your question--definitely "rice" it before cooking! Otherwise it will compact when you do it. It never occurred to me that someone would cook it first!

- 4 cups almond flour – scooped
- 2 1-1/2 1/2 free sweetener – (I use 1-1/2 cups Splenda & 1/2 cup Erythritol)
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 1/2-teaspoon salt
- 1 tablespoons ground cinnamon
- 1/2-teaspoon ground ginger
- 1/4-teaspoon ground nutmeg
- 1 tablespoons vanilla
- 1/4-cup oil
- 4 eggs
- 1/2-cup sour cream
- 1/2 pound frozen carrots – thawed – finely chopped
- 1 cup chopped pecans
- Frosting:
- 1/4-cup butter – softened
- 8 ounces cream cheese – softened
- 1 teaspoons vanilla
- to to taste
- to 350° 9x13-inch 350° Spray a 9x13-inch cake pan with cooking spray.
- In a large bowl combine dry ingredients and stir well.
- to from the oven to a wire rack and cool completely.
- Make Frosting:
- to ingredients and beat with a wire whisk until smooth. Sweeten to taste and frost cake.
Apples for Apple Crisp made with cucumbers

- This is my favorite and easiest recipe when I'm in the mood for
- an apple crisp.
- 4 medium zucchini
- 3 packages of Sugar Free Apple Cider Mix
- 1/2 tsp. cinnamon
- 2 Tbs. splenda
- Water
- Peel the zukes and cut them in half long-wise and take out the
- seeds with a spoon..then chop up the zukes..like you would apple chunks. In a medium saucepan, empty the 3 packages of mix
- and add about 1 cup of water to mix..add splenda and cinnamon
- and then the zukes. Put enough water to just cover the
- zukes and then cook over medium heat for 45 minutes until
- the liquid is almost gone...but there is still some in the bottom
- of the pan.
- Pour zukes into sprayed small casserole dish.

- 3 cups cooked and mashed Delicata Squash
- 1/2 cup heavey cream
- 1/3 cup melted butter
- 2 T. not/Sugar
- 2 T. granular erythritol
- 1 splenda quick pack
- 1/2 t. salt
- 2 eggs
- 1 t. vanilla
- Topping
- 1 T. not/Sugar
- 1 T. granular erythritol
- 2 T. brown diabeti sweet
- 16 drops sweetzfree (3/4 cup equivilent)
- 1/3 cup softened butter
- 3/4 cup chopped pecans
- Beat eggs slightly, then add vanilla, salt, heavy cream, sweeteners, butter, and squash into a mixing bowl and mix well.
- Pour into a greased 1 1/2 quart casserole dish.
- Combine topping ingredients together then crumble over top of squash mixture.
- Bake 30 minutes in a pre-heated 350 degree oven until topping is golden brown
Onion Rings

- Tony Roma's Onion Rings--
- 6 each White onions
- 1 cup Milk
- 3 each Eggs, beaten
- Salt
- 2 cups Pancake mix
- Slice the onions crosswise and separate into rings.
- Combine milk, eggs, and salt to taste in mixing bowl.
- Soak the onions in the mixture about 30 minutes.
- Place pancake mix in a shallow bowl.
- Heat oil for frying in skillet to 375 degrees.
- Remove the onion rings from milk mixture, dip in pancake mix
- and place in hot oil. Fry rings until golden brown and drain on
- paper towels. Pack fried onion rings solidly, but loosely, without
- pressing, into an 8x4" loaf pan. Bake at 400 degrees 10 to 15
- minutes. Turn onto serving plate.

- Great buttery crisp veggies to snack on that even your kids will love.
- Ingredients1 1/2 tbsps extra virgin olive oil
- 1 dash salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 cups chopped kale
- Directions1.Heat oven to 350° F (175° C).
- 2 .Rub the kale with the olive oil to coat and make sure it is fully covered.
- 3 .On a cookie sheet, spread a single layer of kale and season with the garlic and onion powder and a light pinch of salt.
- 4 .Bake in the oven and watch closely (do not let it go brown as it turns bitter), about 6 minutes
Spagetti Squash Cassarole

- Spaghetti Squash Au Gratin
- Serves 6
- 1medium1 medium spaghetti squash
- 2tablespoons2 tablespoons butter
- 1small1 small yellow onion, cut in half and very thinly sliced
- 1/4teaspoon1/4 teaspoon red pepper flakes, or more if you like it spicy
- 1teaspoon1 teaspoon fresh thyme
- 1/2cup1/2 cup sour cream
- 1/2cup1/2 cup shredded cheddar cheese
- Using a fork, scrape the insides of the squash and transfer to a small bowl. Combine the squash, onions, sour cream and half the cheese together and mix well. Transfer the mixture to a buttered baking dish and top with remaining cheese.
- Place into a 375º for 15 – 20 minutes until golden brown on top

- 2 1/2 cups heavy whipping cream
- 6 egg yolks
- 1 cup Splenda
- Whisk all ingredients (added in the order given) in a saucepan over low heat, stirring constantly until thickened. Cool completely, add to sealable non-metal container and refrigerate. Use within 7-10 days.
- Makes approx 1 1/2 pints. 40 carbs in entire recipe; 4 grams per 1/4 cup serving.
