- Lemon Cilantro Rice
- 1 . Prepare cauliflower rice. After cooking in microwave, add a tablespoon of butter and stir so the butter melts and coats the "rice".
- 2 . Add chopped cilantro onto the "rice" and the juice of half a lemon. Salt and pepper if needed. Toss.
- 3 . Serve

- My original plan for dinner was to make a simple batch of ground beef tacos, served authentic Mexican style. As I was browning the beef I was trying to think of some ways to jazz them up a bit. This is what I came up with.

- 1 small onion minced
- 2 cloves garlic minced
- 2 tablespoon Mexican chili powder
- 1 t cumin
- 1 t coriander
- 1/2 t salt
- 1/2 t Mexican oregano rubbed
- 2 t cider vinegar
- 1 can sliced potatoes drained and liquid reserved
- 1 corn tortilla shells fried and drained well
- 1 shredded Mexican blend cheese

- Brown beef on medium high heat. Drain well.
- Return meat to pan. Reduce heat to medium and stir in onion and garlic. Cook 5 minutes. Add seasonings, vinegar and potato liquid; simmer for 20 minutes. Taste and adjust as desired.

- 1 cup carbalose
- 1 cup wheat protein isolate 5000
- 1/4 cup resistant wheat starch 70
- 1 t. baking soda
- 1/2 t. coarse sea salt
- 2 sticks butter (softened)
- 2 T. not/Sugar
- 1/2 cup isomalt
- 1 T. diabeti sweet brown sugar
- 1 splenda quick pack
- 1 t. vanilla
- 2 eggs
- 1 8 oz package Eat Well Be Well mini semi sweet chocolate chips
- 1 cup chopped pecans
- .
- Combine flour, baking soda, and salt in a small mixing bowl and set aside.
- In mixer cream together butter, vanilla and sweeteners.
- Add eggs one at a time, beating well after each addition.
- Gradually beat in flour mixture.
- Stir in morsels and nuts.
- Drop rounded tablespoons of dough onto ungreased cookie sheet.
- Bake in preheated 375 degree oven for 9 to 11 minutes until golden brown.

- 1 (8 ounce) package cream cheese, softened
- 5 dill pickle spears
- Directions
- 1 .Lay the ham slices flat on a serving plate and pat dry. Spread with cream cheese. Place a pickle spear at one end of each slice, and roll the slices into cylinders around the spears; secure with toothpicks.

- 3/4 3/4 3/4 cup unsalted butter, room temperature
- 1 1 1 cup natural peanut butter(sugar free, I use Kirkland organic brand)
- 1 1 1 cup splenda(or sweetener of your choice)
- 2 2 2 large eggs
- 2 2 2 teaspoons pure vanilla extract
- 2 1/2 2 1/2 1/2 cups ground almonds/almond meal/almond flour
- 1/4 1/4 1/4 teaspoon salt
- 1 1 1 teaspoon baking soda
- Instructions:

- In small bowl combine ground almonds, baking soda, and salt. Set aside.
- In mixing bowl add butter and peanut butter. Mix on high with paddle attachment until smooth.
- Add splenda and mix until fluffy. Scrap bowl down.
- Add eggs one at a time with mixer running then add vanilla. Scrap down bowl.
- Last add the almond flour mixture. Mix just until combined.
- to can either bake right away or store dough in the refrigerator in airtight container until a little more firm. You can also pre-scoop all the dough and refrigerate or freeze what you do not want to bake right away.
- Line cookie sheet with parchment paper, or nonstick baking liner.

- Doctored up Lemon Jell-o dessert
- 1 1 box 1 large box of s/f lemon jell-o or two small boxes
- 8 8 4 oz. cream cheese (can use 4 oz if you want less fat)
- 2 2 2 scoops protein powder (I used vanilla EAS)
- 1/4 1/4 1/4 cup coconut Davinci syrup
- 2 3/4 2 3/4 3/4 cups water
- to makes a very rich and satisfying dessert. Good topped with a little whipped cream. This would also make a delicious pie, if you wanted to make a crust.
