Oven Roasted Asparagus

- Oven Roasted Asparagus
- I love fresh oven roasted asparagus. It may be the easiest vegetable side dish ever. Here's how I do it.
- •fresh, thick speared asparagus
- •butter or olive oil (I like butter better)
- •garlic powder
- •sea salt (optional)
- Directions:
- Wash asparagus and dry well with paper towels.
- 1 1/2 the bottom ends of the asparagus (I do about 1 1/2 inches).
- Put asparagus in a single layer on rimmed cookie sheet or other baking pan. Cut little pieces of butter up and distribute over the top of the asparagus, or drizzle olive oil over them.
- to with garlic powder to taste. I don't think it needs salt, but if you like, sprinkle lightly with sea salt.
- to love oven roasted asparagus, and we eat it at least a couple times a week. I've tried it many ways, but when it comes down to it, this simple method of cooking it is my favorite asparagus recipe.
Char's Mushroom Gravy

- Char's Mushroom Gravy

- Char's Mushroom Gravy
- 8 8 8 oz sliced mushrooms - I prefer Baby Bella or crimini, but use what you like, or a combo would be good too
- 1 1 1 tablespoon each butter, olive oil, and coconut oil
- 1/4 1/4 1/4 teaspoon garlic salt
- 1/4 1/4 1/4 teaspoon garlic powder
- 1/8 1/8 1/8 teaspoon onion powder
- 1/4 1/4 1/4 teaspoon Worcestershire sauce
- 2 2 2 tablespoons dry vermouth, dry red or white wine, or dry sherry
- 2 2 2 tablespoons quinoa flour OR Carbalose flour
- 2 2 2 teaspoons beef stock paste OR granules
- 1 1/2 1 1/2 1/2 cups water
- 1 1 1 cup heavy cream
- to ground pepper to taste
- to add the quinoa or Carbalose flour - stir to combine well with the fat left in the pan, and let cook til it's thickened and just a bit browned. This doesn't take long so watch it carefully.
- to to to to to the pan, stir to combine; add the beef stock paste and stir to dissolve. Add the water and Worcestershire sauce. Raise heat a bit and bring to a simmer. Add the garlic and onion powders at this point too.
- 1/2, to to reduce by about 1/2, then add the cup of heavy cream and bring back to a simmer. At this point, simmer til it thickens up, taste and adjust seasonings, continue to simmer, stirring every few minutes, til it's as thick as you'd like.
- Serve over chicken-fried steak, meatloaf, pork chops, or meatballs. Fauxtaters, faux rice, or quinoa are a good base for this sauce too!
- 1 1/2 could use 1 1/2 cups of beef stock in place of the paste/granules/water combo
maple glazed delicata

- Maple Glazed Delicata Rings
- to may choose to peel this squash, but the skin is soft enough, that it is not necessary.
- 1 1 1 Delicata squash
- 1/4 1/4 1/4 cup erythritol blend
- 1/4 1/4 1/4 tsp maple flavoring
- 3 3 3 tbsp butter
- 1/4 1/4 1/4 tsp salt
- 1/8 1/8 1/8 tsp pepper
- to the squash into rings, discarding the seeds and pulp. In a small bowl, combine the erythritol and maple flavoring. Stir well to blend the flavors.
- 35 20 35 minutes, turning once at the 20 minute mark.
Citris Pound Cake

- Ingredients:
- 3/4 3/4 1/2 cup butter (1 1/2 sticks) softened
- 1/4 1/4 1/4 cup cream cheese, softened
- 5 5 5 eggs, at room temperature
- 1 3/4 1 3/4 3/4 cups almond flour
- 1/4 1/4 1/4 cup vital wheat gluten flour
- 1 1/4 1 1/4 1/4 cups Splenda
- 1/4 1/4 1/4 cup Erythritol
- 3 3 3 tablespoons poppy seed
- 1 1 1 teaspoon baking powder
- 1/2 1/2 1/2 teaspoon salt
- 1 1 1 teaspoon Boyajian lemon or orange oil
- to 350°F 325°F 350°F or 325°F depending on pan used (see below.)
- 12-15 4-6 servings. 4-6 net grams of carbohydrate per serving.

- to mom showed me how to make the perfect roast beef, and I mean PERFECT! I love my roast
- 13 500. and this is how I do it. If you like really rare bake for 13 mins. at 500.
- 18 500. like your roast beef cooked medium, put in for 18 mins. at 500. If you like it well
- done, then just burn the darn thing LOL. What's nice about this roast is, if someone likes
- it done a little more, please keep in mind that the end pieces will be done a little more.
- 4 in mind this cooking time is for a 4 lb. roast only, so adjust your time in the oven
- to to the size of your roast!

- 4 4 4 lbs roast beef, tenderloin, eye round, bottom round, rump, any you like (you can use
- 15 size roast, just adjust the sitting time in the oven 15 mins. per lb.)
- 1 1 1 onion, cut into thin rings
- garlic powder
- to 500 to 500 degrees. Wait for a few minutes before you put your roast in, so it
- gets as hot as possible.
- Put the roast in a shallow pan.
- Cut onion into thin rings, and put all over the top and sides of the roast using toothpicks
- if necessary. I sit a few slices on the bottom of my roast too.
- to roast generously with garlic powder, or to your liking. DO NOT SALT roast, or you
- will dry it out.
- Put roast in the oven on the middle rack.
- 500 15 15 degrees for 15 minutes, then shut off oven, and let sit in the oven for 15
- 4 1 lb. (For this 4 lb. roast, 1 hr.). DO NOT under any circumstances open the
- oven door! VERY IMPORTANT!
- 15 you bake your roast the 15 minutes per lb., take it out of the oven, and let sit for
- 15 15 to to to allow juices to distribute in the roast.

- Why not try a tried and true LC recipe, this one is the best I have had in all my years of doing LC
- Chocolate Chip Cookies
- 1/2 cup almond flour
- 1 cup Carbquik
- 1/2 tsp baking soda
- 1/2 cup polydextrose
- 1 egg
- 3/4 cup butter, softened
- 1/4 cup granulated splenda
- 1 Tbsp brown diabetisweet (my tweak)
- 2 Tbsp erythritol (my tweak)
- 1/4 cup vanilla Designer whey powder
- 2 tsp vegetable glycerin
- 1/2 tbsp black strap molasses
- 1/2 tsp vanilla extract
- 1 cup sugar free semi-sweet chocolate morsels
- 1/2 cup chopped walnuts
- Combine all sugars with butter, set aside. Add ,vanilla, glycerin,molasses and egg and mix till all creamed nicely, then add in all dry ingreients,chocolate chips and nuts. Chill cookie dough for 15 minutes in refrigerator before proceeding.
- Drop by heaping tablespoon onto baking sheets covered with parchment paper, I used my silpat.
- Bake in preheated 375 oven for 8-10 minutes, or until golden brown, it took mine 10 minutes. Let stand for 1 minute, remove to wire racks to cool completely. I got 25 cookies.
