- In a food processor place:
- Your so kind...
- Cooled beans
- 2 tablespoons of bacon drippings
- 10 slices bottled jalapenos (nacho slices)
- 2 teaspoons brine, from bottled jalapeno slices
- 1 teaspoon salt
- 2 teaspoons granulated Splenda
- 1 teaspoon onion powder
- 1/2 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- to ingredients on high speed until smooth. Taste to adjust the seasonings... Cover and chill for at least an hour before serving.

- This is PERFECT for when you're on a tight budget. It's gorgeous, it's filling and the smell drives all your workmates crazy!
- This is going to SO be a staple in our house. I took some to work with me, had some for dinner that evening then the last quarter was shared between me and a friend the next evening.

- TEXAS SWEET ONION PIE by Linda Sue
- 2 T. butter
- 1 large onion, sliced thin
- 1 cup heavy cream
- 1/2 t. salt
- 1 t. chili powder (I left this out, didn't have any)
- 8 oz. Monterey jack cheese, shredded (I used cheddar cheese)
- 3 eggs
- Sauté the onion in butter until tender and slightly caramelised.
- Place the cheese in a greased pie plate; top with onions.
- Beat eggs, cream and seasonings. Pour over all.
- Bake at 350º for 40 minutes until a knife inserted in the centre comes out clean. Let stand 10 minutes before cutting.
- Makes 6-8 servings (6 servings - 4 carbs each) (8 servings - 3 carbs each)

- Cheesebread Rounds - takeoff on NancyElle's crispy pizza crust - with pics!

- DH and I really loved NancyElle's crispy pizza crust. I got to thinking about it and figured, why not make a BREAD out of it? So this is the result!
- Cheesy Bread Rounds
- 3 extra-large or jumbo eggs
- 1 scoop Designer Whey unflavored protein powder
- 1 tablespoon raw wheat bran
- 1 tablespoon flax meal
- 6 oz. shredded cheddar cheese
- 6 oz. shredded Mozzarella cheese
- Preheat oven to 375* - lightly grease nonstick muffin top pans to make 12 rounds.
- In a blender or food processor, place ingredients in order listed. Process til smooth. (I used my VitaMix but will probably try the food processor next time - easier to get the stuff out! )
- Portion equally into muffin top pans. An ice cream scooper makes this very easy. I used one that holds just under 1/4 cup. Smooth evenly into cups.
- Bake at 375* approx. 10 minutes, or til just starting to brown on top. They will puff a bit and then flatten again with cooling.
- Let cool in pan 5 minutes, then remove to a rack to cool completely. Store in a ziploc in the fridge.
- EASY, fast, delicious! I figured these to be about 1 carb each but may vary with the protein powder you use. Fiber is a trace.

Champagne Shrimp and Pasta

- CHAMPAGNE SHRIMP & PASTA
- 8 oz. angel hair pasta,
- 1 TBs extra virgin olive oil ,
- 1 cup sliced fresh mushrooms ,
- 1 # medium shrimp peeled& deveined ,
- 1 1/2 cups champagne ,
- 3 Tbs chopped fresh parsley,
- Freshly grated Parmesan cheese
- 2 plum tomatoes, diced
- 1/4 tsp salt
- 2 Tbs minced shallots
- 1 cup heavy cream
- salt & pepper to taste
- cook pasta in boiling water until al dente; drain
- Heat oil over medium-high heat in a large frying pan. Cook and stir mushrooms in oil until tender. Remove mushrooms from pan, and set aside.
- Toss hot, cooked pasta with remaining 1/4 cup cream and parsley. To Serve, spoon shrimp with sauce over pasta, and top with Parmesan cheese.

- English Muffin Biscuit by Maru
- OK, this is what I do now. They taste almost like Red Lobster biscuits to me and no more grainy texture.
- 1/2 cup golden flax
- 1/4 cup oat fiber
- 1/4 cup unflavored whey protein
- 1/4 cup wheat bran
- 1 T vital wheat gluten
- 2 tsp baking powder
- 2 tsp garlic powder
- 1 tsp onion powder
- 1/4 tsp xanthan gum
- 2 large eggs
- 3 T vegetable oil
- 1/2 cup hoods calorie count down milk ( I suppose you could use 1/4 cup cream and 1/4 cup of water)
- 1 T cider vinegar
- 1 drop liquid splenda
- 1 cup shredded cheddar cheese ( I'm guessing because I used 2 handfuls)
- preheat oven to 350, spray muffin top pan with nonstick spray. Bake on middle shelf 10 to 12 minutes. makes 12 to 14 muffins

- 1/4 1/4 1/4 cup erythritol

Peanut Butter Cookies ala Kevin pa

- Another Peanutbutter Cookie
- 1 1/4 cups LC creamy peanutbutter
- 2 eggs
- 1/4 cup peanutbutter davinci syrup
- 1 t. vanilla
- 1/4 t. sweetzfree
- 1/2 cup wheat protein isolate 5000
- 1 1/2 t. baking powder
- 2 t. not/Sugar
- 1/4 cup chopped pecans
- Combine wet ingredients.
- Combine dry ingredients.
- Mix dry into wet.
- Roll into 1 inch balls and place on a parchment lined cookie sheet.
- Flatten balls with fork.
- Bake in a 325 preheated oven for 15 minutes or until golden brown.
- Yeild 2 dozen.....2 carbs each

- 1-1/4 pounds boneless skinless chicken breasts
- 6 cups cubed corn bread
- 8 bread slices, cubed
- 1 medium onion, chopped
- 2 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
- 1 cup chicken broth
- 2 tablespoons butter, melted
- 1-1/2 to 2 teaspoons rubbed sage
- 1 teaspoon salt
- 1/2 to 1 teaspoon pepper
- Directions
- Place chicken in a large skillet and cover with water; bring to a boil. Reduce heat; cover and simmer for 12-14 minutes or a meat thermometer reads 170°. Drain and cut into cubes.
- In a large bowl, combine the remaining ingredients. Add chicken. Transfer to a greased 13-in. x 9-in. baking dish.

- 1 lb ground round
- 1 cup freshly grated parmesan cheese
- 2 egg yolks
- salt & fresh ground pepper
- 2 tablespoons butter
- 1/4 onion, thinly sliced
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/2 cup heavy cream
- 1 tablespoon balsamic vinegar

- 4 Add oil, 1 tbls butter and onion to the pan and cook over medium heat until onion is golden brown.
- 5 Add cream and vinegar and cook on low 2 minutes.
- 6 Pour sauce over patties and serve

- to crumbled my leftover brownies in a bowl along with an egg and mixed it well. I pressed that mixture into the bottom of the spring form pan to form the crust.
- Cheesecake:
- 2 large eggs, beaten
- 16 oz cream cheese, softened
- 1 cup granular Splenda
- 1 tsp vanilla
- 1/2 cup sugar free chocolate chips
- This cheesecake makes several servings and even a small slice is very satisfying.
