  • Wow, these recipe looks awesome. I want to try them in the filling on one of those danishes. If I do...I will post pics.

  • 1/4 cup heavy cream
  • 1 cup Splenda
  • 1/2 tspn cinnamon
  • 1/2 tspn vanilla
  • 3 cups pecans
  • Combine all ingredients except for pecans in small saucepan. Cook over med heat til sweetner and spiced are well combined. Stir in pecans. Cook til pecans are completely "sugared" and there is no liquid left in pan. Spread on wax ppr and cool.

  • This is one of the best LC desserts I have ever made. I took a regular
  • recipe and switched it to LC..You can double this. You could put this in a 9 x 13 dish..It easily serves 16..
  • Brownie Torte
  • 3/4 cup Carbquik
  • artificial sweetener to equal one cup
  • 1/3 cup unsweetened cocoa
  • 1/2 tsp. salt
  • 1 stick of butter OR 1/2 stick of butter and 4 Tbs. coconut oil, softened
  • 2 eggs
  • 1/2 tsp. vanilla
  • Preheat oven to 350
  • Grease an 9 inch square pan
  • Put all ingredients into a bowl and mix for about one minute. Pour into a
  • prepared pan and bake until done..around 15-20 minutes.
  • Cool in pan. Then crumble brownies
  • Pudding Layer:
  • 2 small packages of instant sugar free chocolate pudding
  • 3 cups of Carb Countdown Milk
  • Creamy Layer:
  • 1 1/2 cups of heavy cream, whipped OR
  • one 8 ounce Cool Whip (if you use that)
  • Toppings: crushed sf candy bar/chopped pecans
  • Assemble:
  • In the bottom of a serving bowl put 1/2 of the crumbled brownies
  • Then layer 1/2 of the pudding, then 1/2 of the whipped cream or Cool Whip
  • Repeat..ending with the whipped cream. Shave or crumble a sf candy
  • bar on top for color and add some chopped pecans if you like.
  • Refrigerate for at least 4 hours..This recipe above will serve 8

  • 1 bunch fresh asparagus, trimmed
  • cooking spray
  • salt and pepper to taste
  • 2 tablespoons butter
  • 1 tablespoon soy sauce
  • 1 teaspoon balsamic vinegar
  • Directions
  • 1 .Preheat oven to 400 degrees F (200 degrees C).
  • 2 .Arrange the asparagus on a baking sheet. Coat with cooking spray, and season with salt and pepper.
  • 3 .Bake asparagus 12 minutes in the preheated oven, or until tender.
  • 4 .Melt the butter in a saucepan over medium heat. Remove from heat, and stir in soy sauce and balsamic vinegar. Pour over the baked asparagus to serve.

  • CANDIED PECANS
  • Do you need a sweet snack? These are pretty quick and sooo yummy. You can throw this together and get some other things done around the house and then it's SNACK TIME. Becareful to ration them out. You don't want to eat them all at once.
  • 1 pound of fresh unsalted pecan halves
  • 1/2 c butter (melted)
  • 1/2 c Splenda
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground ginger
  • Spray the crockpot (probably a 4 -5 qt) with Pam. Put the pecans in crock. Pour butter over pecans and mix well. Add the rest of the ingrediants and mix again.
  • Cook on high for 45 min then take the lid off and turn to low for 1 1/2 hours-mix several times during that time. If they are still not dry you can pour them on a piece of wax paper for a few minutes and they will dry out.

  • Description: Craving a Big Mac? I was too, this did the trick!
  • Ingredients: 1/2 lb hamburger
  • 2 cups shredded lettuce
  • 1 tbs dehydrated chopped onions
  • 10 dill pickle slices (chopped)
  • 2 slices american cheese
  • 3 tbs low carb Thousand Island dressing
  • How To Prepare: Place dehydrated onions in a small cup of warm water to rehydrate.
  • Place lettuce and pickles in a bowl.
  • Brown hamburger over medium heat.
  • Drain, leave in a little of the grease, then stir in cheese until melted. It should coat the hamburger.
  • Immediately pour hot hamburger over salad and stir.
  • Drain chopped onion, and stir into salad.
  • I like to microwave my salad for a minute to warm everything up.
  • Stir in Thousand Island dressing.
  • Enjoy!

  • 20 large stuffing mushrooms (white button mushrooms)
  • 8 ounces cream cheese (chopped into small cubes)
  • 1 lb bulk pork sausage (like breakfast sausage or Jimmy Dean's)
  • 1 bunch green onion (chopped)
  • parmesan cheese (optional)
  • Change Measurements: US | Metric
  • Directions:
  • Prep Time: 20 mins
  • Total Time: 40 mins
  • 1 Brown pork sausage and crumble well.
  • 2 Drain sausage from skillet leaving a thin coating of oil behind and sauté chopped onions until slightly wilted.
  • 3 Return sausage to pan with onions and add cream cheese.
  • 4 Over low heat stir sausage, onions, and cream cheese until well blended.
  • 5 Remove stems from mushrooms and stuff each mushroom cap with the mixture.
  • 6 Top with parmesan if desired.
  • 7 Bake at 350°F for 20-25 minutes until heated through and the mushrooms are beginning to leak their water.
  • 8 Note: Sauté mushroom stems and use any leftover filling in an omelette.

  • As long as I can remember "occasions" where we would gather to eat, there was always ham roll ups. Always a favorite for the men, women, and children alike, this ham roll up recipe is a sure winner!
  • 1 •1 lb of sliced ham (you can use inexpensive packaged ham, like we do, or get the deli to thin slice it for you.),
  • 1 •1--8 oz package of cream cheese
  • •finely chopped green onions to taste
  • 1 •1 Tbsp of Garlic powder
  • 2 •2 Tbsp of Accent (leave this out if you're sensitive to MSG)
  • Instructions
  • 1 .Soften your cream cheese and add your green onions, garlic powder and Accent.
  • 2 .Spread a thin layer of the cream cheese mixture on a piece of ham, then roll it, and cut into bite sized pieces. Usually one roll = 3 bite size pieces.
  • They look so appetizing stacked next to each other on their ends covering a beautiful plate.
  • **Tip** If you're using pre-packaged ham, dry each piece of ham between paper towels before spreading cream cheese mixture on them

  • 1 tb Minced shallot

  • 1 ) Season fillets with salt and pepper. Dust fillets in flour and shake off excess.
  • 2 ) For each fillet, heat 1 tablespoon of butter in a large skillet. When foam subsides, saute sole 2 - 3 minutes on one side until brown.
  • 3 ) Carefully turn and brown on other side 2 - 3 minutes. Remove to a serving plate and keep warm, while cooking remaining fish.
  • 4 ) Place remaining butter in a skillet. When butter foams, add minced shallot, parsley and lemon juice. Pour over fish and serve.

  • 4 packets Stevia Plus
  • 1/2 cup cocoa - I like the Hershey's Special Dark
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1/2-teaspoon salt
  • 1 tablespoons vanilla
  • 1/3-cup oil
  • 4 eggs
  • 1-cup sour cream
  • Frosting:
  • 1/2-cup 1 – 1 stick – room temp
  • 1 large egg – room temp
  • 1/3 cup granular Erythritol – powdered – I use my coffee bean grinder
  • 1/3 cup Splenda
  • 2 packets Stevia Plus
  • 8 ounces cream cheese – room temp
  • 1 teaspoons vanilla
  • to 350° 9x13-inch 350° Spray a 9x13-inch cake pan with cooking spray.
  • In a large bowl combine dry ingredients and stir well.
  • to from the oven to a wire rack and cool completely.
  • Make Frosting:
  • Beat butter with electric mixer until light and fluffy. Add sweeteners and beat well scraping sides of bowl as needed.
  • Add the egg and beat until very fluffy…beat in vanilla.
  • Add softened cream cheese a little bit at a time beating until fluffy after each addition.
