Lemon Blueberry Muffin (gluten free)

- 6 eggs
- 1 t vanilla extract
- 1/2 c pure maple syrup
- 1/4 c coconut milk
- 1/2 c coconut flour, sifted
- 1 t salt
- 1/2 t baking soda
- zest of a half a lemon
- 1/2 c palm shortening, melted
- 2 c fresh blueberries
Almond Puff Loaf

Preheat the oven to 350°F
- First Layer
- * 1/2 cup (1 stick) butter*, cut into pats or 1/2-inch cubes
- * 1 cup King Arthur Unbleached All-Purpose Flour
- * 1/4 cup water
- * *If you're using unsalted butter, add 1/4 teaspoon salt.
- Second Layer
- * 1 cup water
- * 1/2 cup (1 stick) butter*
- * 1 cup King Arthur Unbleached All-Purpose Flour
- * 3 large eggs, at room temperature; warm them, in the shell, in hot tap water for 10 minutes if they're cold from the fridge
- * 1 teaspoon almond extract
- * *If you're using unsalted butter, add 1/4 teaspoon salt.
- Topping
- * 2/3 cup jam or preserves
- * 1/2 to 2/3 cup slivered or sliced almonds, toasted in a 350°F oven for about 7 to 10 minutes, or until they're a light, golden brown
- Icing
- * 1/2 cup confectioners' or glazing sugar
- * 1 teaspoon vanilla
- * 4 teaspoons milk or water (approximately)
Pineapple Cilantro Ice Pops

Put all ingredeints in a blender and puree until smooth
- 1 ripe pineapple cut into small chunks
- handful of fresh cilantro leaves
- 1/3 c sugar
- juice of 1/2 lime
- pinch of salt
Chocolate Covered Peanut Butter Balls

Mix everything (except chips) in a bowl
- 1 c plain peanut butter
- 1 c powdered sugar
- 1 c chopped nuts (almonds)
- 2 tabl melted butter
- 1 tea vanilla
- 24 oz semi-sweet chocolate chips
Slow Cooker Black Beans

1. Rinse and sort beans according to package directions
- 1 (16-oz.) package dried black beans
- 2 bacon slices
- 1 large sweet onion, diced (about 2 cups)
- 2 celery ribs, diced (about 1/2 cup)
- 3 garlic cloves, chopped
- 2 cups diced cooked ham
- 1/2 teaspoon ground cumin
- 1/4 teaspoon coarsely ground black pepper
- 1/4 teaspoon ground red pepper
- 1 (32-oz.) container low-sodium fat-free chicken broth

In a medium pan, bring the water, all of the spices and the ginger to a boil over medium heat
- 2 cups water
- 1 (1-inch) piece cinnamon stick
- 4 green cardamom pods, smashed
- 4 whole cloves
- 1/2 star anise
- 2 quarter-sized coins fresh ginger
- 2 scant teaspoon black tea leaves (recommended: Taj Mahal) or black tea of choice
- 2 teaspoons honey, or more to taste
- Whole milk or half-and-half
