Baked Veggie Treats

This time of year, sticky sweet snacks are everywhere
- 1 cup cooked, mashed sweet potato
- 1/4 cup cooked pureed spinach
- 1 egg
- 2 tbs milk
- 1 cup crushed whole wheat bread crumbs
NILLA Apple Crisp

HEAT oven to 350°F. TOSS apples with 1/4 cup sugar and 1 tsp
- 4 large Granny Smith apples (2 lb.), peeled, thinly sliced
- 1/2 cup packed brown sugar, divided
- 2 tsp. ground cinnamon, divided
- 1/3 cup old-fashioned or quick-cooking oats
- 1/4 cup (1/2 stick) cold margarine
- 25 Reduced Fat NILLA Wafers, crushed (about 1 cup crumbs)
- 1-1/2 cups thawed COOL WHIP LITE Whipped Topping
Tzatziki Sauce (Vegan)

Directions: Mix all ingredients together and chill in fridge while cooking falafel
- Ingredients:
- 1 6oz container of Coconut Milk Plain yogurt.
- 1/2 a cucumber (peeled and diced)
- 2 cloves of garlic (minced)
- 2-3 tbsp lemon juice
- 1/2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- dash of paprika (really - just a tiny sprinkle, it can be overpowering)
Herb Crackers (Gluten Free)

- 2 c almond flour
- 1/4 c tapioca flour
- 1 t salt
- 1 t garlic powder
- 1 t dried thyme
- 1 t dried sage
- 1 t black pepper
- 1/4 c coconut oil, melted

Best Butterscotch Pie

Preheat oven to 325. In a large heavy saucepan, combine sugars and cornstarch
- 1/2 c sugar
- 1 1/1 c dark brown sugar
- 6 T cornstarch
- 2 1/2 c whole milk
- 4 egg yolks, lightly beaten
- 1 T butter
- 1 t vanilla extract
- 1 9in prepared pie crust, baked

Risottoe with Peas and Greens

- 1 qt Vegetable Stock
- 1 lemon
- 2 T EVOO
- 1/2 telow onion, finely diced about 3/4 c
- 1 leek, white and light green parts only, finely diced
- 2 garlic cloves, finely minced
- leaves from 6 sprigs of thyme
- coarse sea salt
- 1 c arborio rice
- 2 c baby spinach or any other baby greens
- 1 c fresh english peas (or frozen)
- 1/4 c roughly chopped fresh basil
- freshly ground pepper

Preheat grill to med heat
- 1/2 c steak sauce
- 3 tbsp creamy peanut butter
- 2 tbsp soy sauce
- 1 tbsp grated fresh ginger
- juice of 1 lime and zest
- 4 bone-in steaks (12oz ea), 3/4 in thick
Parker's Fish and Chips

To keep hot for up to 20 minutes, line a baking sheet with paper towels and put the fish into a 200 degree oven
- 3 pounds fresh cod fillets (choose thick ones)
- Kosher salt and freshly ground black pepper
- 1 cup plus 2 tablespoon all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon freshly grated lemon zest
- 1/4 teaspoon cayenne pepper
- 2 extra-large egg
- Vegetable oil, for frying
Carrot Kheer (Navratri Special)

Red carrots work best but you can use the orange ones too
- 2 1/4 cups low fat milk, boil till it reaches 1 1/2 cups
- 1 cup grated carrot
- 4 tbsps sugar (adjust)
- 1/2 tsp cardamom pwd
- pinch of saffron, mix with 2 tsps milk
- 5-6 cashew nuts/almonds, toasted in ghee
- 10-12 raisins, toasted in ghee
- 2 tbsps ghee
- You can substitute low fat milk with whole milk. Add 1-2 tbsps sweetened condensed milk towards the end of the cooking process for a richer taste.
