Brown Rice Milk

You won't believe how easy it is to make your own rice milk
- 1/2 cup brown rice
- 8 cups water
- 1/2 teaspoon sea salt
- 1/8 teaspoon granulated kelp (optional)
- 1 cup or more cold water
- 3 tablespoons maple syrup or honey
- 1/2 teaspoon ground cinnamon
Baked Salmon

Preheat the oven to 350 degrees F (175 degrees C)
- 1 tablespoon olive oil
- 1 small yellow chopped onion
- 1/2 teaspoon dried minced garlic
- Salt and Pepper
- 1/2 cup herb seasoned bread crumbs
- 2 tablespoons mayonnaise
- 1 teaspoon mustard powder
- 2 salmon fillets
Apple Pudding

Sift dry ingredients. Add egg and mix well
- 1 cup flour
- 1 cup sugar
- 1 t cinnamon
- 1 t nutmeg
- 1 t baking powder
- 1 beaten egg
- 4-6 large apples, thinly sliced
- 2 T butter
- 1/4 cup water
Sweet and Sour Meatballs

Serve w/noodles (egg) and veggies
- Sauce:
- 2 tabl olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 slices soft whole-wheat bread, torn in pieces w/crust removed
- 1/2 c plain yogurt
- 1/2 c broccoli puree
- 1 large egg
- 1/2 lb ground chicken or turkey
- 1/2 tea salt
- 1/2 tea nutmeg
- 1/2 tea pepper
- 2 tea olive oil
- 1 med onion, chopped
- 2 tea firmly packed dark brown sugar
- 1/2 c beef broth
- 1 tabl ketchup
- 2 tea steak sauce
- 1/4 c crushed pineapple in natural juice or 1/4 c pureed pineapple
- 1 tabl orange marmalade

- 2 teaspoons ground cinnamon
- 2 teaspoons ground cloves
- 5 cups flour (use whole wheat pastry, spelt, or white flour)
- 1 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 egg
- 1 cup butter
- 2/3 cup honey
- 2/3 cup molasses
Zippy Tortilla Chips

In a small bowl, combine first 6 ingredients
- 1/2 t brown sugar
- 1/4 t garlic powder
- 1/4 t onion powder
- 1/4 t ground cumin
- 1/4 t paprika
- 1/8 t cayenne pepper
- 4 corn tortillas (6in)
Thai Peanut Chicken

Heat 2 tbsp of the dressing in a large skillet on med heat
- 1 lb boneless skinless chicken breasts, sliced
- 1/4 c Catalina Dressing, divided
- 1 14.5 oz can chicken broth
- 2 tbsp soy sauce
- 1 tbsp peanut butter
- 1/2 lb (8oz) spaghetti, broken, uncooked (can also use egg or rice noodles or angel hair pasta)
- 2 c broccoli florets
- 1 c thin carrot slices
- 1 1/2 c water
Ginger Mashed Sweet Potatoes and Apples

Spray a 4-quart saucepan with non-stick cooking spray, then add the apples, sweet potatoes, water and salt
- 2 apples, peeled and cut into 1/2 inch chunks
- 2 pounds of sweet potatoes cut into 1/2 inch
- chunks
- 1/4 cup water
- 1/4 tsp salt
- 1 Tbsp agave nectar
- 1/4 tsp cinnamon
- 1/2 tsp freshly grated ginger
Puree of Roasted Seasonal Vegetables

1. Preheat oven to 375. Line several jelly pans w/foil and set aside
- 1 Butternut Squash, peeled and seeded
- 3 Sweet Potatoes, peeled
- 5 carrots, peeled
- 2 sweet onions, peeled
- garlic, small head
- 4 T olive oil
- 1 t dried sage
- salt and pepper to taste
Chickpeas and Broccoli

- 1 pound of broccoli cut into large spears,
- stems chopped into 1/2 pieces
- 10 cloves of garlic, smashed
- 1 15-ounce can of chickpeas, drained and rinsed
- 2 tsp olive oil
- 1/4 tsp salt
- 2 tsp lemon zest
- 11/2 tsp dried oregano
- 1 cup vegetable broth
