Basic Crepes

Batter: In a mixing bowl, add the flour and salt and make a well in the center
- 1 cup all-purpose flour
- Pinch kosher salt
- 2 eggs
- 1/2 cup milk
- 1/2 cup club soda
- 3 tablespoons melted butter, plus 3 tablespoons for cooking the crepes
Fruit Juice Shapes

An alternative to Jell-o
- 4 c pure grape juice, pure white grape juice, cranberry juice cocktail or other clear juice
- 4 envelopes unflavored gelatin
- (You can make this with juices that aren't clear, such as orange juice, but they won't have that shimmery, translucent quality. But if you want your kids to "eat" their orange juice, why not?)
Deluxe Black Bean Burger

In a large bowl, finely mash the black beans with a potato masher or your hands
- Szechuan Tomato Dressing:
- * 2 (15-ounce) cans black beans, drained and rinsed
- * 2 shallots, minced
- * 1 teaspoon red pepper flakes
- * 1 teaspoon smoked paprika
- * 1 teaspoon Worcestershire sauce
- * 1 teaspoon hot sauce
- * 1 teaspoon freshly chopped cilantro leaves
- * 1 egg white, slightly beaten
- * 3 tablespoons whole-wheat flour
- * 1/2 tablespoon kosher salt
- * 1 tablespoon cracked black pepper
- * 3 tablespoons olive oil
- * Spinach
- * Sliced roasted red peppers, jarred
- * Sliced red onion
- * 4 multi-grain rolls
- * Szechuan Tomato Dressing, recipe follows
- * 1/4 cup Szechuan sauce
- * 1/4 cup chopped sun-dried tomatoes
- * 1 tablespoon freshly chopped cilantro leaves
- * 1/4 cup olive oil
- * Salt and freshly ground black pepper
Sweet Potato Hash w Rosemary

Banana Flax Cookies

- 2 large bananas
- 1 stick butter, softened
- 3/4 cup unrefined sugar
- 1 teaspoon vanilla
- 1 egg, beaten
- 1 cup teff flour
- 1 1/4 cups unbleached white flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/2 cup flax seed

To make the sponge: Mix the flour, water and yeast together in a large bowl and let it sit for about 45 minutes
- Sponge:
- 1 c (4 1/2 oz) unbleached all-purpose flour
- 1 c water
- 2 tea instant yeast
- Dough:
- 3 1/2 c (14 3/4 oz) flour
- 1 3/4 tea salt
- 1/3 c (2 3/8 oz) sugar
- 1/4 c (1 3/4 oz) vegetable oil
- 2 large eggs plus 1 yolk (save the white for the wash)
- Wash:
- 1 egg white
- 1 tea sugar
- 1 tabl water
- poppy seeds (optional)
Chocolate Pudding

Whisk together flour, sugar, cocoa powder and salt in a small saucepan
- 3 Tbs all-purpose flour
- 3 Tbs evaporated cane crystals (or favorite dry sweetener)
- 2 Tbs unsweetened cocoa powder
- 1/8 tsp salt
- 2 cups So Delicious Coconut Milk Beverage (favorite flavor—if using chocolate, delete 1 tablespoon cocoa)
- 1/2 tsp vanilla
Strawberry Cream Cake

Mix crumbs and butter; press firmly onto bottom and halfway up side of lightly greased 9-in springform pan
- 1 1/2 c graham cracker crumbs
- 6 tbsp melted butter
- 1 pt (2c) strawberries, divided
- 1 3/4 c boiling water
- 1 pkg (8 serving size) strawberry flavor gelatin
- 2 c ice cubes
- 1 tub (8oz) cool whip strawberry whipped topping
- 1 sq baker's semi-sweet baking chocolate, melted
