Honey Mustard

- 1 c homemade mayonnaise
- (1/3 c coconut oil, melted; 1/3 c sesame oil, 1/3 c EVOO, 1 egg, 1 T brown mustard, 1 T lemon juice, pinch of salt)
- 2 T brown mustard
- 1/2 t lemon juice
- 1 T pure maple syrup
Honey Walnut Mayonnaise

Combina all ingredients
- 1 c honey
- 1/2 c mayo
- 1/4 c chopped walnuts
- 1 1/2 tea cinnamon
Hashed Browns

Melt the butter in a large (10-12 in) saute pan
- 5 tabl unsalted butter
- 1 1/2 lbs boiling potatoes, peeled and 1/2 in diced
- 1 1/2 c chopped yellow onions (2 onions)
- 2 tea kosher salt
- 1 tea freshly ground black pepper
- 2 tabl minced fresh flat-leaf parsley
- 2 tabl minced scallions, white and green parts
Danish Apple Pancakes (Aeblepandekager)

This is more like a cake than traditional pancakes
- 6 eggs
- 1/2 c milk
- 3/4 c sugar (org calls for 1 c but plenty sweet w/ 3/4 c)
- 1 c flour (make gluten free 1/4 c almond flour, 1/4 c coconut flour, 1/4 sorghum or millet flour, and 1/4 c starch)
- 1/2 t salt
- 1/2 c cream (make dairy free w/So Delicious Dairy Free creamer - plain)
- 2 T chia seeds (optional)
- 3 apples, peeled and sliced
- butter
- cinnamon
- juice from one lemon
Super Sloppy Joes

Heat a large skillet over medium high heat
- 1 tablespoon extra-virgin olive oil, 1 turn of the pan
- 1 1/4 pounds ground beef sirloin
- 1/4 cup brown sugar
- 2 teaspoons to 1 tablespoon steak seasoning blend, such as McCormick brand Montreal Seasoning
- 1 medium onion, chopped
- 1 small red bell pepper, chopped
- 1 tablespoon red wine vinegar
- 1 tablespoon Worcestershire sauce
- 2 cups tomato sauce
- 2 tablespoons tomato paste
- 4 crusty rolls, split, toasted, and lightly buttered
Braised Pork Belly

- 1 T each: salt, black pepper, onion powder, garlic powder and smoked paprika
- 1 lb pork belly
- 4 large carrots, chopped
- 1 large onion, chopped
- 1 c chicken stock
- serve w sweet potato hash with rosemary
Chicken and Rice Soup

1. Finely chop the carrots, celery and onion by hand or in a food processor
- 2 carrots, peeled
- 1 stalk celery
- 1 small onion, peeled
- 2 tabl olive oil
- 1/4 tea pepper
- 1/2 tea sweet paprika
- 1/4 c short-grain white rice
- 1 qt water
- 1 qt low-fat, reduced-sodium chicken broth
- 2 skinless chicken breasts on the bone
- 1 c cauliflower puree
- 1/2 c carrot puree
- 1 tabl cornstarch
- 2 tabl cream cheese at room temp
- 1/4 c freshly squeezed lemon juice
Butternut Squash with Browned Butter and Thyme

1 Heat a large skillet on medium heat
- 1 1/2 pounds butternut squash, peeled, seeds removed, flesh diced into 1/2-inch pieces (about 4 cups)
- 3 Tbsp butter
- 1 Tbsp chopped fresh thyme (or 1 teaspoon of dried)
- Salt and freshly ground black pepper
