Rasgulla and Rasmalai are milk based desserts prepared with freshly prepared chenna aka cottage cheese balls
- 15 small rasgullas, at room temp
- 1 cup sugar syrup (from the rasgullas)
- 3 cups milk
- 1/2 tsp cardamom pwd
- 2 tbsps sliced pistachios
- 2 pinches of saffron, mixed few tbsps milk
Quiche Bites

To make the crust: In a medium-sized bowl, whisk together the flours and salt
- Crust
- 1 cup (4 1/4 ounces) King Arthur Unbleached All-Purpose Flour
- heaping 1/4 teaspoon salt
- 6 tablespoons (3 ounces) unsalted butter
- 2 1/2 to 3 tablespoons (1 1/4 to 1 1/2 ounces) ice water
- Filling
- diced cooked mushrooms; cooked, crumbled sausage; grated cheese; pesto (traditional, or sun-dried tomato); cooked (or thawed frozen) broccoli; diced red pepper; smoked salmon; or whatever else sounds good to you
- Custard
- 2 large eggs
- 2/3 cup (5 3/8 ounces) half and half
- 1/4 teaspoon salt
Real Meatballs and Spaghetti

When you cook spaghetti, don't use oil in the water; the sauce will stick better
- For the meatballs:
- 1/2 pound ground veal
- 1/2 pound ground pork
- 1 pound ground beef
- 1 cup fresh white bread crumbs (4 slices, crusts removed)
- 1/4 cup seasoned dry bread crumbs
- 2 tablespoons chopped fresh flat-leaf parsley
- 1/2 cup freshly grated Parmesan cheese
- 2 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon ground nutmeg
- 1 extra-large egg, beaten
- Vegetable oil
- Olive oil
- For the sauce:
- 1 tablespoon good olive oil
- 1 cup chopped yellow onion (1 onion)
- 1 1/2 teaspoons minced garlic
- 1/2 cup good red wine, such as Chianti
- 1 (28-ounce) can crushed tomatoes, or plum tomatoes in puree, chopped
- 1 tablespoon chopped fresh flat-leaf parsley
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper
- For serving:
- 1 1/2 pounds spaghetti, cooked according to package directions
- Freshly grated Parmesan
Pumpkin Banana Mousse Tart

This tart can be made a day or two ahead and kept refrigerated
- For the crust:
- 2 c graham cracker crumbs (14 crackers)
- 1/3 c sugar
- 1/4 tea ground cinnamon
- 1/4 lb (1 stick) unsalted butter, melted
- For the filling:
- 1/2 c half-and-half
- 1 15-oz can pumpkin puree
- 1 c light brown sugar, lightly packed
- 3/4 tea kosher salt
- 1/2 tea ground cinnamon
- 1/4 tea ground nutmeg
- 3 extra-large egg yolks
- 1 package (2 tea) unflavored gelatin
- 1 ripe banana, finely mashed
- 1/2 tea grated orange zest
- 1/2 c cold heavy cream
- 2 tabl sugar
- For the decoration:
- 1 c (1/2 pint) cold heavy cream
- 1/4 c sugar
- 1/4 tea pure vanilla extract
- orange zest (optional)
Homemade Tortillas

This is a recipe that I grew up on
- 1 cup flour
- 1/4 tsp. salt
- 1/2 cup cornmeal
- 1 egg
- 1 1/2 cup cold water
Susan's Beef Italian Skillet Meal

Serve with green beans or a salad
- 1 1/2 cups gluten free pasta of your choice (I used these rice noodles from a local Asian market -- they don't get mushy!)
- 1 lb. ground beef
- 1 small onion, finely diced
- 1 stalk celery, finely diced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon sea salt
- 1 teaspoon freshly ground pepper
- 1 (8 oz.) can tomato sauce + 1/3 cup water
- 3 tablespoons blanched almond flour (or parmesan cheese) to sprinkle on top of each serving
Lemon Grilled Chicken

Make 1 T lemon zest and put in a bowl
- 1 lemon
- 2 T olive oil
- 1 clove garlic, crushed
- 1 T chopped fresh parsley
- 1/4 t dried thyme
- 1/4 t dried majoram
- 1/4 t salt
- 1/4 t black pepper
- 4 skinless, boneless chicken breasts (about 6 oz ea)

Chicken Enchiladas

This is a great dish for a potluck dinner because all the work can be done in advance - it just needs to be popped ...
- 1 tabl olive oil
- 2 boneless, skinless chicken breasts cubed (about 3/4 lb)
- 1/2 tea garlic powder
- 1/4 tea pepper
- 1/2 c sweet potato or carrot puree
- 1/4 c sour cream
- 1 c shredded, cheddar or mozzarella, divided
- 6 (9in) tortillas
- 1/2 c spinach puree
- 1/2 c mild tomato salsa
Refried Beans and Sauce

Great with chips or on loaded baked potatoes
- To make sauce:
- 1 can of beans (or 1 1/2 c of cooked beans)
- 1 T of onion powder
- 2 cloves of garlic
- 1 t chili powder
- 1/2 c chicken broth
- 2-3 T bacon grease
- salt and pepper to taste
- do above and add 3T taco sauce and a couple handfuls of cheese
