Peanut Butter Dream Bars

- 1/3 c confectioners' sugar
- 1/2 t salt

- 1/4 c creamy peanut butter
- 1 1/2 oz cream cheese, room temp
- 2 t pure vanilla extract
- 2 T chocolate chips, melted

- 6 boneless, skinless chicken breast cutlets (about 2 1/4 lbs).
White Chicken Stock

- 1/2 teaspoon black peppercorns
- 10 parsley sprigs
- 8 thyme sprigs
- 3 celery stalks, cut into 2-inch-thick pieces
- 3 bay leaves
- 2 medium onions, unpeeled and quartered
- 2 carrots, cut into 2-inch-thick pieces
- 2 garlic cloves, crushed
- 16 cups cold water
- 6 pounds chicken pieces
Barbecue Sauce

- 1 c ketchup
- 2 T vinegar
- 1 t salt
- 1/4 t pepper
- 2 T Worcestershire sauce

- 1 t dry mustard powder
Butternut Tomato Soup

1. Slice the shallots and celery with the slicing attachment on a food processor
- 3 shallots, peeled
- 4 stalks celery
- 2 tabl olive oil
- 5 c diced, peeled and seeded butternut squash (1 small squash, about 2 1/2 pounds)
- 1 1/2 qts reduced-sodium vegetable broth
- 1 15 oz can diced tomatoes (preferably no salt added)
- 1/2 tea salt
- 1/2 tea pepper
- Topping (optional)

- 2 tabl grated Parmesan

- Chicken Tikka:
- 1/2 1/2 1/2 teaspoon ground cumin
- 1/2 1/2 1/2 teaspoon ground coriander
- 1/4 1/4 1/4 teaspoon cayenne pepper
- 1 1 1 teaspoon table salt
- 2 2 2 pounds boneless, skinless chicken breasts , trimmed of fat
- 1 1 1 cup plain whole-milk yogurt (see note above)
- 2 2 2 tablespoons vegetable oil
- 2 2 2 medium garlic cloves , minced or pressed through a garlic press (about 2 teaspoons)
- 1 1 1 tablespoon grated fresh ginger
- Masala Sauce:
- 3 3 3 tablespoons vegetable oil
- 1 1 1 1/4 onion , diced fine (about 1 1/4 cups)
- 2 2 2 medium garlic cloves , minced or pressed through a garlic press (about 2 teaspoons)
- 2 2 2 teaspoons grated fresh ginger
- 1 1 1 fresh serrano chile , ribs and seeds removed, flesh minced (see note above)
- 1 1 1 tablespoon tomato paste
- 1 1 1 tablespoon garam masala (see note above)
- 1 1 can 1 (28-ounce) can crushed tomatoes (Muir Glen)
- 2 2 2 teaspoons sugar
- 1/2 1/2 1/2 teaspoon table salt
- 2/3 2/3 2/3 cup heavy cream
- 1/4 1/4 1/4 cup chopped fresh cilantro leaves
- Serve with basmati rice.
Extra Easy Hummus (Tahini Free)
