Danish Apple Pancakes (Aeblepandekager)

This is more like a cake than traditional pancakes.(From the book Denamrk - Enchantment of the World by R. Conrad Stein copyright 2003). Gluten free adaption are my own. (And I don't know why the picture is sideways b/c it is the correct format on my computer).

Ingredients

  • 6 eggs
  • 1/2 c milk
  • 3/4 c sugar (org calls for 1 c but plenty sweet w/ 3/4 c)
  • 1 c flour (make gluten free 1/4 c almond flour, 1/4 c coconut flour, 1/4 sorghum or millet flour, and 1/4 c starch)
  • 1/2 t salt
  • 1/2 c cream (make dairy free w/So Delicious Dairy Free creamer - plain)
  • 2 T chia seeds (optional)
  • 3 apples, peeled and sliced
  • butter
  • cinnamon
  • juice from one lemon

Preparation

Step 1

Beat eggs lightly and add milk (and chia seeds if using). Combine sugar, flour and salt; add to egg mixture. Stir in cream. Fry apple slices over medium-high heat in butter until they are golden brown. Cover the bottom of a lightly buttered baking dish with the fried apples. (The recipe did not state what size dish to use. I used a 11 3/4 x 7 1/2 casserole dish and the recipe was ready closer to 15-20 min mark). Pour the batter made from the eggs and other ingredients over the apples. Bake at 500F for 20-25 (if 15-20 if using a smaller pan). Sprinkle cinnamon and lemon juice over the top. Return to over and bake an additional 10 minutes.
