Oven Baked Fajitas

Preheat the oven to 400 degrees
- 1 lb. boneless skinless chicken breasts, cut into strips
- 2 Tbl. olive oil
- 2 tsp. chili powder
- 1 1/2 tsp. cumin
- 1/2 tsp. garlic powder
- 1/2 tsp. dried oregano
- 1/4 tsp. seasoned salt
- 1 (15 oz.) can diced tomoatoes, with green chilies (Rotel)
- 1 medium onion, sliced
- 1/2 red bell pepper, cut into strips
- 1/2 green bell pepper, cut into strips
Light Cheese Lasagna

Position a rack in the upper third of the oven and preheat to 475 degrees
- 9 sheets no-boil lasagna noodles
- 1 small shallot
- 3 cups fat-free low-sodium vegetable or chicken broth
- 3 Tbl. all-purpose flour
- 1/2 tsp. freshly grated nutmeg
- 1 cup part-skim ricotta cheese
- 1/4 cup chopped fresh parsley
- 1 1/2 cups roughly chopped celery
- 1 1/2 cups roughly chopped carrots
- 1 cup shredded part-skim mozzarella cheese (about 4 oz.)
- 1 large egg
- 2 plum tomatoes, chopped
Stickin' Chicken***

Mix all ingredients, you may have to add more soy sauce
- 1/4 cup peanut butter
- 2 Tbl. soy sauce
- 1/4 tsp. garlic powder
- salt and pepper to taste
Grape Salsa

In a medium bowl combine the grapes, cucumber, lime juice, olive oil, salt and pepper
- 2 cups red seedless grapes, halved
- 1 cucumber, peeled, seeded and chopped
- 2 Tbl. lime juice
- 3 Tbl. olive oil
- 1 tsp. salt
- 1/4 tsp. pepper

French Toast

In a bowl, whisk eggs, cream, vanilla, cinnamon, and salt; pour half into 13" by 9" baking dish
- 6 lg. eggs
- 1 cup heavy or whipping cream
- 1 tsp. vanilla extract
- 1/2 tsp. ground cinnamon
- 1/4 tsp. salt
- 12 (1/2 inch) slices sourdough bread
- 3 Tbl. butter
- Confectioner's sugar, strawberries, and maple syrup
Calico Couscous

Combine first 6 ingredients in a medium saucepan; place over medium-high heat, and bring to a boil
- 1 1/2 cups water
- 1/2 cup frozen whole kernel corn
- 1 1/2 Tbl. lime juice
- 1 tsp. minced garlic (about 2 cloves)
- 1/2 tsp. salt
- 1/4 tsp. ground pepper
- 1 cup couscous, uncooked
- 3/4 cup seeded, chopped tomato (1 medium)
- 2 Tbl. chopped fresh cilantro or parsley
Cheese Toast

Preheat oven to 400 degrees
- 4 slices Italian baguette, cut diagonally (1/2 inch thick)
- 2 Tbl. unsalted butter, room temperature
- 1/2 tsp. minced garlic
- Pinch of paprika
- 1/4 cup shredded Swiss cheese
- 1 Tbl. shredded Parmesan
Steak 'N' Bacon Cheddar Meatballs

Preheat oven to 450 degrees
- 2 Tbl. olive oil
- 1 medium onion, minced
- 8 oz. raw bacon, diced
- 2 lbs. ground beef
- 6 oz. cheddar cheese, grated
- 1/2 cup bread crumbs
- 3 eggs, lightly beaten
- 2 tsp. salt
Broccoli Soup

Peel the broccoli stems and chop the stems and florets into bite-size pieces
- 1 bunch broccoli (about 1 1/2 lb)
- 1 onion, chopped
- 1 large red potato, cut into 1/2 inch cubes
- 2 cups whole milk
- 1 cup shredded cheddar cheese
