Preheat the oven to 375 degrees and line a baking sheet with parchment paper
- 1 cup walnuts
- 1 Tbl. unsalted butter, melted
- 2 tsp. packed light brown sugar
- 1 tsp. ground cumin
- 1/2 tsp. paprika
- Pinch of cayenne pepper
- Kosher salt
- 2/3 cup plain Greek yogurt
- Juice of 1/2 lemon
- 1 Tbl. honey
- 2 tsp. rice vinegar (not seasoned)
- Freshly ground black pepper
- 2 pink grapefruit
- 2 stalks celery, thinly sliced
- 2 heads Belgian endive, cut into large pieces
- 5 cups baby arugula
- 1 small bunch chives, cut into 1/2-inch pieces
Grilled Pork Tenderloin with Watermelon Tabouli

Preheat a grill to medium high
- 1 cup bulgur
- 1/4 cup plus 2 tablespoons extra-virgin olive oil, plus more for the grill
- Juice of 2 lemons, plus wedges for serving
- 2 cloves garlic, grated
- 2 teaspoons paprika
- 1 large pork tenderloin (about 1 1/4 pounds)
- Kosher salt and freshly ground pepper
- 1 tablespoon red wine vinegar
- 2 cups cubed watermelon
- 1 cup finely chopped fresh mint
- 4 scallions, thinly sliced
Pastina Soup

Heat a medium saucepan over medium heat
- 1 tablespoon extra-virgin olive oil
- 1 stalk celery, finely chopped
- 1 carrot, finely chopped
- 2 shallots, minced
- 3 sprigs thyme
- Kosher salt
- 1 2 -inch piece parmesan cheese rind
- 1 quart chicken stock (homemade or low-sodium)
- 1 1/4 cups star-shaped pastina
- 1 cup frozen peas, thawed
- 1/2 cup grated parmesan cheese
- 1 teaspoon grated lemon zest (optional)
Lime Chicken Kebabs with Mango Salsa

Preheat grill. Squeeze juice from 1 lime; cut other into wedges
- 2 limes
- 1 1/2 cups diced mango
- 1/4 cup diced red bell pepper
- 2 sliced scallions
- 2 Tbl. chopped cilantro
- 1/2 tsp. ground ginger
- 1 tsp. salt
- 1/2 tsp. black pepper
- 3 Tbl. olive oil
- 6 boneless, skinless chicken thighs, cut into 1 1/2 inch pieces
- 1 red onion, cut into wedges
- 2 orange bell peppers, cut into wedges
Strawberry Trifle

Stir 1 1/2 cups boiling water into 1 pkg
- 1 1/2 cup boiling water
- 1 pkg. (8 serving size) Strawberry Jello
- 1/2 cup cold water
- 1 pkg. frozen pound cake
- 1 tub Cool Whip
- 2 cups sliced strawberries
Alfredo Sauce

In a saucepan or skillet, warm the butter and cream
- 1 stick butter
- 1 cup heavy cream
- Salt and freshly ground black pepper
- 2 cups freshly grated Parmesan
- Pasta cooking water, as needed
Light Baked Spaghetti

Bring a large pot of salted water to a boil
- 6 oz. whole wheat angle hair pasta
- 2 tsp. olive oil
- 1 onion, finely chopped
- 2 cloves garlic, finely chopped
- 1/2 lb. sweet Italian chicken sausage, casings removed
- 2 green bell peppers, diced
- 1/2 tsp. seasoned salt
- 1/4 tsp. Italian seasoning
- 1 - 28 oz. can crushed tomatoes
- 1 cup torn fresh basil leaves
- Cooking spray for the pan
- 1/2 cup shredded part skim mozzarella cheese
- 1/2 cup shredded cheddar cheese
Glazed Lemon Bars

Heat oven to 350 degrees. Stir together 1 cup Bisquick and powdered sugar
- Glaze:
- 2 Tbl. powdered sugar
- 2 Tbl. firm margarine
- 3/4 cup sugar
- 1/2 cup fat free cholesterol free egg product or 2 eggs
- 1 Tbl. Reduce Fat Bisquick
- 2 tsp. grated lemon peel
- 2 Tbl. Lemon juice
- 3/4 cup powdered sugar
- 1 Tbl. plus 1 1/2 tsp. lemon juice
- Stir ingredients until smooth
Triple Berry Brownie

- 1 box Betty Crocker fudge brownie mix
- 1 pkg. (8oz.) cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp. vanilla
- 1 cup frozen whipped topping, thawed
- 1 1/3 cups halved fresh strawberries
- 1 cup fresh blueberries
- 1/2 cup fresh raspberries
Slow Cooker Cinnamon Almonds

- 1 cup sugar
- 1 cup brown sugar
- 3 Tbl. cinnamon
- 1/8 tsp. salt
- 1 egg white
- 2 tsp. vanilla
- 3 cups almonds
- 1/8 cup water
