Onion Mashed Potatoes***

In 4 qt. saucepan, cover potatoes with water and bring to a boil
- 1 envelope Lipton onion soup mix
- 6 all purpose potatoes, peeled & cut up
- 1/2 cup milk
- 1/2 cup margarine
Teriyaki Chicken and Rice Casserole****

Preheat oven to 350 degrees
- 3/4 cup low sodium soy sauce
- 1/2 cup water
- 1/3 cup packed brown sugar
- 1 Tbl. honey
- 3/4 tsp. ground ginger
- 1 tsp. olive oil
- 1/2 tsp. minced garlic
- 2 Tbl. corn starch
- 2 Tbl. water
- 1 1/2 lbs. skinless chicken breast
- 32 oz. frozen mixed vegetables (look for the unsauced stir fry or Asian varities)
- 1 cup drained canned pineapple tidbits
- 3 cups cooked rice
Orange Pineapple Cake

Mix together ingredients for cake and bake at 350 degrees in a greased and floured 9X13 pan for 40 minutes
- Topping:
- 1 yellow cake mix
- 1 small orange jello or orange cake mix
- 1 can peach pie filling
- 2 eggs
- 1 8oz. sour cream
- 1 8oz. softened cream cheese
- 1 small box instant vanilla pudding
- 1 large crushed pineapple, undrained
- 1 9oz. cool whip
Cocktail Weiners***

Microwave jelly until smooth, then add mustard and microwave
- 1 jar current jelly
- 1 small jar mustard
- 1 or 2 Tbl. honey

Turkey & Dumpling Soup

Mix dry stuffing, oil and eggs until just blended
- 1 pkg. (6 oz.) Stove Top stuffing mix for chicken
- 1/4 cup oil
- 2 eggs
- 3 Tbl. Kraft Zesty Italian dressing
- 1 onion, chopped
- 3 carrots, peeled, chopped
- 3 stalks celery, chopped
- 4 cups chopped cooked turkey
- 3 cans (14 oz.) fat free reduced sodium chicken broth
- 2 cups water
- 1 sprig fresh rosemary
Barbecue Beef Kabobs

In a small bowl, combine the ketchup, salad dressing, soy sauce and Worcestershire sauce
- 1 cup ketchup
- 1/3 cup French dressing
- 1/3 cup reduced-sodium soy sauce
- 1 Tbl. Worcestershire sauce
- 1 lb. boneless beef sirloin steak, cut into 1-inch cubes
- 1 cup fresh baby carrots
- 2 Tbl. water
- 1 medium green pepper, cut into 1 inch pieces
- 1/2 medium onion, cut into 1 inch pieces
- 1 lb. medium fresh mushrooms, halved
Unstuffed Pepper Bake

Preheat oven to 375 degrees
- 1 lb. ground beef
- 1/3 cup chopped onion
- 1 1/2 cup tri-color peppers, diced, fresh
- 2 garlic cloves, minced
- 1/2 tsp. salt
- 1/4 tsp. ground black pepper
- 1 can diced tomatoes, drained
- 1 1/2 cups instant white or brown rice
- 1 tsp. Worcestershire sauce
- 1 tsp. Italian seasoning
- 1 8oz. shredded cheddar cheese, divided
- 1 (15 oz) tomato sauce
Pasta Fajoli (Grandma Bosco's recipe)

Brown 1 large chopped onion in about 1/4 cup olive oil
- 1 large chopped onion
- 1/4 cup olive oil
- 1/2 cup finely chopped celery
- 1/4 cup chopped parsley
- 1/3 cup stewed tomatoes
- 3 lbs. Great Northern Beans
- l - lb. broken spaghetti
- Salt and pepper to taste
Pan-Seared Chicken with Grapefruit Butter Sauce

Place the potatoes in a large pot with enough salted water to cover and bring to a boil
- 2 lbs. new potatoes, halved
- 3 Tbl. chopped parsley
- 2 Tbl. olive oil
- 4 boneless skinless chicken breast
- salt and pepper
- 4 scallions, green and white portions chopped separately
- 1/4 cup dry white wine
- 4 red grapefruits, 2 cut into segments and 2 juiced
- 1 stick (4 ounces) butter, cut into 8 pieces and chilled
Krunch Kale Chips
