Greek Style Chicken Soup

In large stock pot, heat oil, and saute carrot, celery and onion for 2 minutes on medium high until translucent
- 2 Tbl. vegetable oil
- 1/2 cup carrot, shredded
- 1/2 cup celery, chopped
- 1/2 cup onion, chopped
- 2 cups water
- 2 cans fat free reduced sodium chicken broth
- 1/2 cup fresh squeezed lemon juice
- 1 tsp. lemon zest
- 8 egg yolks
- 2 cups white rice, cooked
- 2 cups cooked chicken breast meat, diced
- Salt and pepper to taste
Basil Lemonade***

In a small saucepan, over medium heat, bring the sugar and 1 1/2 cup cold water to a simmer
- 1 cup sugar
- 1 cup fresh basil leaves, plus 8 sprigs for garnishing

- 2 tablespoons butter or margarine
- 4 cups halved and thinly sliced sweet onions (about 1 1/2 onions)
- 2 teaspoons sugar
- 2 teaspoons chopped fresh thyme leaves
- 1 1/2 lb beef stew meat
- 1 cup Progresso™ beef flavored broth (from 32-oz carton)
- 1 package (.87 oz) onion gravy mix
- 2 cups 1-inch pieces diagonally cut carrots
- 1 cup 1-inch pieces diagonally cut parsnips
Kickoff Popper Dip

Heat oven to 350 degrees. Beat cream cheese and mayo in medium bowl until well blended
- 1 pkg. (8oz) cream cheese, softened
- 1/2 cup Kraft Light Mayo reduced fat mayonnaise
- 1/4 lb. (4 oz.) Velveeta, cut in 1/4 inch cubes
- 3 jalapeno peppers, seeded, finely chopped
- 12 Ritz Crackers, crushed (about 1/2 cup)
- 1 Tbl. butter, melted
- 1 green onion, sliced
Easy Mashed Potatoes & Corn

In medium sauce pan, combine corn, milk, margarine, salt, and pepper; mix well
- 1 - 11oz can Super Sweet Yellow & White Corn, undrained
- 2 cups milk
- 3 Tbl. margarine
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 cups Potatoes flakes
- 1/2 cup sour cream
- 2 Tbl. Parmesan cheese
- 2 Tbl. real bacon bits
Corn-Rice Salad***

- 4 ears fresh corn
- 1 1/2 cups cooked rice, cooled
- 1 pint cherry or grape tomatoes, halved
- 1 cup fresh arugula
- 1 small red onion, cut in thin wedges
- 1 jalapeno pepper, thinly wedges
- 2 Tbl. rice vinegar or red wine vinegar
- 2 Tb. olive oil
