Pasta Fajoli (Grandma Bosco's recipe)

  • 1 large chopped onion
  • 1/4 cup olive oil
  • 1/2 cup finely chopped celery
  • 1/4 cup chopped parsley
  • 1/3 cup stewed tomatoes
  • 3 lbs. Great Northern Beans
  • l - lb. broken spaghetti
  • Salt and pepper to taste



Step 1

Brown 1 large chopped onion in about 1/4 cup olive oil. Add 1/2 cup finely chopped celery (leaves included) and 1/4 cup chopped parsley. Add 1/2 cup stewed tomatoes. Simmer for 10 to 15 minutes. Then add 3 lbs. Great Northern Beans and a jar of water. Let this all cook for 45 minutes. Salt and pepper to taste.

Cook 1 lb. broken spaghetti in a separate pot until tender. Drain half of water out and then add bean mixture and fold in and let simmer 5-10 minutes. Add more olive oil if needed. Maybe 1/3 cup more.
