- 4 eggs
- 3/4 Cup flour
- 1/2 tsp. salt
- 3/4 Cup milk
- 1/4 Cup sugar

- 2 medium apples, peeled if desired and thinly sliced
Skillet Garlic-Rosemary Chicken Thighs

directions Coat the chicken thighs in the seasoned flour, shaking off the excess
- 6 skinless, boneless chicken thighs, trimmed of fat
- 3 tablespoons flour, seasoned with salt and pepper
- 2 tablespoons olive oil
- 1/4 cup dry white wine
- 1 1/2 cups chicken broth
- 3 cloves garlic, minced
- 1 teaspoon minced fresh rosemary
- 1 teaspoon grated lemon zest
- Roasted new potatoes, rice, or noodles, for serving

ALMOND CRUNCH COOKIES

Oven 350 In a medium bowl blend butter and sugar w/ electric mixer until it forms a grainy paste
- 1/2 cup butter, softened
- ¾ cup white sugar
- 1 large egg
- ½ tsp pure almond extract
- ¼ cup almonds ground in food processor
- 1 cup sliced almonds
- 1 cup all-purpose flour
- ¼ cup heavy cream
- 1 cup semisweet chocolate chips
- 2 tsp light corn syrup
PIE CRUMBLE

1. Stir all ingredients in bowl until no dry spots remain and mixture form clumps
- 1 cup AP flour
- 1/2 cup light brown sugar
- 6 T unsalted butter, melted

REUBEN QUESADILLA

Sauce - stir together all ingredients Quesadilla: For each tortilla
- Sauce:
- 1/2 c mayo
- 2 TBS ketchup
- 2 TBS minced scallions
- 1 TBS sweet pickle relish
- 1 1/2 tap cider vinegar
- Quesadilla:
- 2 cups shredded Swiss cheese
- 1 cup sauerkraut, drained
- 1 tap caraway seeds
- 8 OZ thinly sliced deli corned beef
- 4 10" flour tortillas
CHOCOLATE MACAROONS

- 100 grams powdered sugar
- 50 grams powdered almonds, almond flour or almond meal
- 25 grams unsweetened Dutch-process cocoa powder
- 2 large egg whites, at room temperature
- 65 grams granulated sugar
- 4 oz. bittersweet or semisweet chocolate, finely chopped
- 1/2 cup heavy cream
- 2 tsp. light corn syrup

- 1/2 cup water
- 4 eggs, separated
- 2 cups flour
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1 cup butter, softened
- 2 cups sugar
- 1 tsp. vanilla
- 1 cup buttermilk
- Frosting
- 4 egg yolks
- 1 can (12 oz.) evaporated milk
- 1-1/2 tsp. vanilla
- 1-1/2 cups sugar
- 3/4 cup (1-1/2 sticks) butter or margarine
- 1 pkg. (7 oz.) BAKER'S ANGEL FLAKE Coconut (about 2-2/3 cups)
- 1-1/2 cups PLANTERS Chopped Pecans
CRANBERRY-LEMON SQUARES

- DOUGH
- 3 c flour
- 1 tsp baking soda
- 1 c white sugar
- 1/4 tsp salt
- Zest of one lemon
- 8 oz (2 sticks) cold butter, cubed
- 1 egg
- 1 tsp vanilla extract
- 2 TBS to 1/4 cup cold water
- FILLING
- 1-12 oz package cranberries
- 3/4 c white sugar
- 2 TBS cornstarch
- Juice of one lemon
LOW-FAT MASHED POTATOES

1. Cook potatoes. Bring potatoes and enough water to cover by 1" to boil in large pot over high heat
- 2 lbs yukon gold potatoes, peeled, cut into 1" pieces
- 1/2 cup fat-free half-and-half
- 1 TBS unsalted butter
- 2 cloves garlic, peeled and mashed
- 1 bay leaf
- 1/4 tsp pepper
- 3 TBS low-fat mayonnaise
- 1 tsp salt
