- STREUSEL:
- 3 tablespoons all-purpose flour
- 4 teaspoons granulated sugar
- 1 tablespoon packed light brown sugar
- 2 tablespoons unsalted butter, cut into 1/2-inch pieces, softened
- Pinch salt
- 1/2 cup pecan halves
- MUFFINS:
- 1 1/3 cups (6 2/3 ounces) all-purpose flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 1/4 cups pecan halves, toasted and cooled
- 1 cup plus 1 tablespoon (7 1/2 ounces) granulated sugar
- 2 large eggs
- 6 tablespoons unsalted butter, melted and cooled slightly
- 1/2 cup whole milk
- 2 cups fresh cranberries
- 1 tablespoon confectioners' sugar
Frittata w/ Sausage, Potatoes, Greens and Cheese

Missouri Botanical Gardens
- 2 tbs olive oil, divided
- 1/2 pound pork sausage links cut 1/2" thick
- 1 medium leek, white and light green, chopped
- 1/2 pound new potatoes, cut 1" dice
- 1 bunch spinach, stems removed
- salt and pepper
- 12 large eggs
- 2 TBS parsley, finely chopped
- 1 1/2 cup Fontina cheese, shredded
CELERY SALAD WITH LEMON DRESSING

Mix all ingredients, chill 2 hours
- * 1/2 cup good olive oil
- * 2 teaspoons grated lemon zest
- * 1/4 cup plus 1 tablespoon freshly squeezed lemon juice (3 lemons)
- * 2 tablespoons minced shallots
- * 1 teaspoon celery seed
- * 1/2 teaspoon celery salt
- * 1/2 teaspoon anchovy paste
- * Kosher salt and freshly ground black pepper
- * 5 cups thinly sliced celery hearts, tender leaves included, sliced on an angle (about 12 stalks)
- * 4-ounce chunk aged Parmesan cheese
- * 2/3 cup toasted walnuts, coarsely chopped
- * Whole flat-leaf parsley leaves
CARMELIZED BACON-WRAPPED PINEAPPLE

1. Preheat oven to 375 degrees
- 12 slices thick-sliced bacon, cut in half crosswise
- 1 pineapple, peeled, cored, cut into 24 one inch cubes
- 24 bamboo skewers
- 1/4 cup dark brown sugar
- sweet and sour sauce
RAPINI WITH BALSAMIC

Coat a large saucepan or cast-iron skillet over high heat with oil
- Olive oil
- 3 minced garlic cloves, plus additional as needed
- Maldon sea salt to taste
- 2 big bunches broccoli raab, washed and trimmed, stems intact
- Condiment-grade aged balsamic vinegar*
BEEF STOCK

1. Oven 400F 2. Arrange bones in an even layer in a shallow roasting pan
- 3 1/2 lbs meaty beef bones, such as oxtail
- 3 cups coarsely chopped celery
- 1 1/2 cups chopped carrot
- 2 TBS tomato paste
- 3 medium onions, peeled and halved (about 1 1/2 lb)
- 5 quarts water
WATERMELON SALAD

1. Combine all the ingredients together and toss lightly
- 3 cups seedless watermelon, diced
- 1/2 medium red bell pepper, diced
- 1/4 cup fresh cilantro, chopped
- 1 medium scallion, chopped
- 1 tsp UNpacked brown sugar
- 2 TBS fresh lime juice
- 1/4 tsp ground cumin
- 1/8 tsp salt
- 1/4 tsp crushed red pepper
PUMPKIN CHOCOLATE CHIP MUFFINS

1. Grease muffin pan, do not use liners
- 15.25 oz spice cake mix (moist)
- 15 oz can pumpkin
- 2 TBS unsweetened applesauce
- 2/3 cup semi-sweet chocolate chips
- 1 TBS light brown sugar
CAST IRON APPLE PIE

Pre heat oven to 350 Peel apples cut into wedges, toss with cinnamon and sugar
- 3 lbs tart apples
- 1 tsp cinnamon
- 3/4 cup sugar
- 1 cup firmly packed light brown sugar
- 1/2 cup butter
- 1 pkg refrigerated pie crusts
CREAMY CUCUMBER SALAD

- 1/2 cup thinly sliced red onion
- 3 TBS cider vinegar
- 1/3 c sour cream
- 1/4 c minced fresh dill
- 1/2 tsp granulated sugar
- Salt and pepper
