PAN-ROASTED ASPARAGUS WITH TOMATOES

This recipe works best with asparagus that is at least 1/2 inch thick near the base

- INGREDIENTS
- 2 tablespoons olive oil
- 2 medium cloves garlic, sliced thin
- 1 pint cherry tomatoes, halved
- 1/3 cup brine-cured black olives(such as kalamata), pitted and chopped
- 1 tablespoon unsalted butter
- 2 pounds thick asparagus spears(see note), ends trimmed
- Kosher salt and ground black pepper
- 4 tablespoons chopped fresh basil (optional)
- 1 ounce grated Parmesan cheese(about 1/2 cup)
ROASTED POTATOES AND ONIONS

1. Oven 375 degrees 2. Coarsely chop onion and place in large bowl
- 4 cups chunked red potatoes (about 4 medium potatoes)
- 1 cup coarsely chopped yellow onion
- 2 TBS seasoning (coarse flake salt, paprika, black pepper, thyme, rosemary, garlic and chipotle)
- 2 TBS olive oil

- 1/4 cup granulated sugar

- 1/4 cup all-purpose flour

- 1/8 teaspoon salt

- Pumpkin Filling
- 1/2 cup granulated sugar
- 1/3 cup brown sugar
- 3 tablespoons all-purpose flour
- 1 teaspoon ground cinnamon
- 2 teaspoons pumpkin pie spice
- 1 teaspoon ground ginger
- 1/2 teaspoon salt
- 1 can (15 ounce size) solid-pack pumpkin
- 2 eggs
- 3 tablespoons heavy cream
- Apple Layer
- 2 tablespoons brown sugar
- 1/8 teaspoon ground cinnamon
- 1 teaspoon all-purpose flour
- 3 Granny Smith or Golden Delicious apples, peeled, cored and sliced 1/8-inch thick
- 1 tablespoon unsalted butter
- 3 tablespoons granulated sugar
CHOCOLATE WHISKEY BALLS

1. Place cookie crumbs, powdered sugar and ground pecans in a lrge bowl to stir and combine
- 2 1/2 cups vanilla wafer crumbs (1 -12 oz box= Just under 3 cups ground)
- 1/2 cup powder sugar, sifted
- 1 cup pecan halves, finely ground in food processor (1 c whole=1cup ground)
- 6 oz semisweet or bittersweet chocolate, broken in pieces (I use chocolate chips)
- 1/2 cup bourbon
- 3 TBS light corn syrup

EVERYTHING - CHEDDAR CORN BREAD OR MUFFINS

1. Oven 400 degrees, grease 13x9 pan or use liners in 24 muffin tins 2
- 2 1/2 C flour
- 1 1/2 c corn meal
- 1 TBS everything spice blend
- 1 TBS sugar
- 4 t baking powder
- 1 t Kosher salt
- 2 1/4 C buttermilk
- 1/2 butter, melted
- 2 eggs, beaten
- 2 cups shredded cheddar cheese
CRANBERRY CHRISTMAS CAKE

- 2 cups sugar
- 3/4 cup butter, softened
- 1 tsp vanilla
- 2 cups AP flour
- 12 oz fresh cranberries
- 1 cup confectioners sugar, 2 tbsp OJ, zest from 1 orange and 1 tbsp milk and wisk together and glaze warm cake
LEMON GREEK CHICKEN
