- Chile Vinegar
- 1/3 cup white vinegar
- 1 serrano chile, stemmed and sliced into thin rings
- Stir-Fry
- 2 (6-ounce)boneless, skinless chicken breasts, trimmed and cut against grain into 1/4-inch thick slices
- 1 teaspoon baking soda
- 8 ounces(1/4-inch-wide) rice noodles
- 1/4 cup vegetable oil
- 1/4 cupoyster sauce
- 1 tablespoonplus 2 teaspoonssoy sauce
- 2 tablespoons packed dark brown sugar
- 1 tablespoon white vinegar
- 1 teaspoon molasses
- 1 teaspoonfish sauce
- 3 garlic cloves, sliced thin
- 3 large eggs
- 10 ounces broccolini, florets cut into 1-inch pieces, stalks cut on bias into 1/2-inch pieces (5 cups)

1. Mix flour, shortening and salt until pea-sized crumbs are formed
- 1 cup flour
- 1/2 tsp salt
- 1/3 cup shortening

1. Adjust oven rack to middle position and heat oven to 275 degrees
- 1 (1-pound) pork tenderloin, trimmed
- Kosher salt and pepper

- 6 scallions, white and green parts separated and sliced thin
- 2 t grated fresh ginger
- 1/2 t ground white pepper

- Flour
- 4 TBS butter
- Pinch granulated garlic
- 1 garlic clove, minced
- Salt and pepper to taste
- Minced parsley, optional

ROASTED GARLIC POTATOES

1. Adjust oven rack to upper-middle position, place rimmed baking sheet on rack and heat oven to 450 degrees 2
- 2 lbs large red potatoes, scrubbed, dried and each cut into 8 wedges
- 1 TBS cornstarch
- 1/2 tsp garlic powder
- salt and pepper
- 3 TBS vegetable oil
- 1 TBS unsalted butter, softened
- 1 large clove garlic, minced
- 1 tsp minced fresh parsley
- 1/8 tsp grated lemon zest
ITALIAN SAUSAGE SOUP

1. Saute celery, onions and garlic in olive oil until barely tender
- 1 1/2 cups coarsely chopped celery
- 1 1/2 cups coarsely chopped onions
- 1 1/2 cups sliced carrots
- 1 clove garlic, minced
- 3 TBS olive oil
- 2- 14.5 oz cans chopped tomatoes, reserve the liquid
- 1 cup tomato puree
- 1 1/4 lbs Italian sausage, sauteed, drained
- 6 cups chicken broth
- 1/2 tsp oregano
- 2 bay leaves
- 1/2 tsp thyme
- 1/2 cup chopped parsley
- 3 TBS sugar
- 1 cup orzo or other small pasta
- Grated Parmesan cheese for garnish
BAKED GARLIC PARMESAN CHICKEN WINGS

- 1 tap salt
- 1 tap pepper
- 1 TBS Italian seasoning
- 1 tap cumin
- 1/3 cup Parmesan
- 4 cloves, garlic, minced
- 1/4 cup fresh parsley, minced
- 2 TBS Olive Oil (optional)
SMASHED POTATOES

1. Place potatoes in large saucepan and cover w/ 1" cold water; add 1 tsp salt and bay leaf
- 2 lbs red bliss potatoes, 2" diameter, unpeeled, scrubbed

- 4 TBS butter, melted and warm
- 1/2 cup cream cheese (4 oz) at room temperature
- ground black pepper
- 3 TBS chopped fresh chives

- DRESSING:
- 1/4 cup sour cream
- 1/4 cup buttermilk
- 2 TBS mayo
- 2 TBS grated parm
- 1/2 coarsely ground black pepper

- Salad:
- 4 cups chopped romaine lettuce
- 1 Bartlett pears, thinly sliced
- 1/4 cup chopped, toasted pecans
QUICK AND EASY PASTA WITH TOMATOES
