Sweet Potato Casserole

Boil potatoes for about 30-40 minutes or until tender
- 3 cups sweet potatoes
- 1/2 cup sugar
- 2 eggs, lightly beaten
- 4 Tbsp. butter or margarine
- 1/2 cup milk
- 1 1/2 tsp. vanilla
- Topping
- 1 cup brown sugar
- 1/3 cup flour
- 1 cup chopped pecans
- 1/3 cup butter
- 1 cup coconut, optional
Pineapple Iced Tea

- 1/2 gallon water
- 12 regular size tea bags
- 3 sprigs fresh mint
- 1 2/3 C. sugar
- 12 oz. pineapple juice
- 6 oz. freshly squeezed lemon juice
lemon ginger chicken thighs

1. Finely shred peel from lemon and juice lemon
- 1 lemon
- 1 Tbsp. grated fresh ginger
- 1/2 tsp. salt
- 2 Tbsp. honey
- 1 Tbsp. reduced-sodium soy sauce
- 8 chicken thighs with bone
- 2 tsp. vegetable oil
Creamy Macaroni Salad

Cook macaroni acccording to pkg
- 16 oz. elbow macaroni
- 1 each med. green and red bell pepper, seeded and chopped
- 1 C. mayonnaise
- 1 Tbs. cider vinegar
- 1/2 tsp. sugar
- 1 tsp. each salt and pepper
- 1 C. chopped celery
- 1 med. onion, chopped
- Zest of 1 lemon
- Grape tomatoes for garnish
Taco Soup from Marty Robey

Cook meat and onion together until meat is browned
- Rena’s Taco Soup
- 2 lbs ground beef, turkey or venison
- 1 chopped onion
- 2 packets dry Ranch Dressing mix
- 2 packets dry taco seasoning mix
- 16 oz can white northern beans, undrained
- 16 oz can kidney beans, undrained
- 16 oz can pork and beans, undrained
- 16 oz can tomatoes w/green chilis, undrained –
- 1-10oz can Rotel Mild
- 1 – 10oz can of original
- 16 oz can tomatoes wedges, undrained
- 32 oz can corn, undrained
- 2 cups water
Strawberry Salad with Candied Almonds and Strawberry Balsamic Vinaigrette

1. Sprinkle brown sugar in a skillet set over medium heat

- mixed greens
- chevre (goat cheese)
- strawberries, cut in fourths
- strawberry balsamic vinaigrette (recipe follows)
- candied almonds (recipe follows)
- Arrange the desired amounts of each ingredient on separate plates, or toss in a large bowl.
- Strawberry Balsamic Vinaigrette
- 5 large strawberries, cut in pieces
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 2 tablespoons pure maple syrup or honey
- 1/4 teaspoon kosher salt
- 1 tablespoon freshly squeezed lemon juice
- Combine all ingredients in a blender or food processor.
- Candied Almonds
- 3 tablespoons brown sugar
- 1 tablespoon water
- 1/4 cup sliced almonds
Quick-Layered Pesto Spread

Spread softened cream cheese over entire bottom of a shallow serving platter or pie plate
- 1 8 oz. package plain cream cheese, softened
- 8 oz. store bought basil pesto sauce in oil (or homemade if you're feeling ambitious)
- 2 cloves of garlic, minced
- 2 medium tomatoes, diced (plum tomatoes are best for this)

- 2 large egg whites
- 2 tablespoon(s) instant coffee granules, dissolved in 2 tablespoons hot water

1 Thaw shrimp, if frozen. Peel and devein shrimp, removing tails
- 1 pound fresh or frozen medium shrimp in shells
- 1 medium onion, chopped (1/2 cup)
- 1/2 cup chopped celery
- 1/2 cup chopped green sweet pepper
- 2 cloves garlic, minced
- 2 tablespoons butter or margarine
- 1 14.5-ounce can diced tomatoes, undrained
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/8 to 1/4 teaspoon cayenne pepper
- 2 tablespoons snipped fresh parsley
- 2 cups hot cooked rice
