Primal Chocolate Chip Cookies

Place almond flour, salt and baking soda in a food processor Pulse in shortening, honey and vanilla until dough
- 2 cups blanched almond flour
- 1/4 teaspoon celtic sea salt
- 1/2 teaspoon baking soda
- 1/4 cup vegan palm oil shortening
- 2 tablespoons honey
- 1 tablespoon vanilla extract
- 1/2 cup semi-sweet chocolate chunks
Diane's Pico de Gallo

Combine all ingredients in a mixing bowl and store in an airtight container for up to 5 days
- 55 roma tomatoes, diced
- 1small1 small red onion, diced
- 1small1 small jalapeño pepper, minced, seeded if desired for less heat
- 1/4cup1/4 cup fresh cilantro, finely chopped
- juice of 2-3 limes (to taste)

Lemon Chicken
- 2 tbsp. lemon zest
- 1/3 cup freshly squeezed lemon juice
- 2 cloves garlic, crushed
- 2 tsp. fresh thyme leaves
- 1 tsp. fresh rosemary leaves, finely minced
- 1 tsp. salt
- 1 tsp. black pepper
- 2-4 lbs. of bone-in, skin-on chicken thighs or drumsticks
- 2-3 tbsp. melted butter
- Thinly sliced lemons, for garnished
Tomato and Basil Soup

Place prepared tomatoes, onions, garlic, herbs and seasonings in a large 2 quart saucepan
- 2 cups gluten-free chicken stock
- 3 cups fresh, peeled and chopped tomatoes - about 3 large tomatoes
- 1 small chopped onion
- 3-4 minced garlic cloves
- 1/2 teaspoon oregano
- 1/8 teaspoon marjoram
- 1/4 About 1/4 cup loosely packed fresh basil, coarsely chopped
- Salt and pepper to taste
- Fresh basil leaves for garnish
Clean Brownies

A cleaner version of yummy moist brownies!
- 1 -1 (15-ounce) can no-salt-added black beans, drained and rinsed
- 4 -4 egg whites
- 1/3 -1/3 cup canola or olive oil, more for the baking dish
- 1/4 -1/4 cup cocoa powder
- 1/8 -1/8 teaspoon salt
- 2 -2 teaspoon gluten-free vanilla extract
- 1/2 -1/2 cup plus 2 tablespoons organic cane sugar (or succanat)
- 1/2 -1/2 cup gluten-free dark or carob chocolate chips
- 1/3 -1/3 cup finely chopped walnuts
Baby- Red Pepper and Pasta Dream (6 months+)

Simply place all ingredients (except the pasta) in a saucepan and bring to the boil
- 2 oz uncooked pasta (something like rigatoni is ideal, because the tubes tend to hold the sauce - perfect if your baby likes to eat pasta with his fingers!)
- 8 oz (1 cup) red bell pepper, chopped
- 1/2 garlic clove, crushed
- 3 fl oz (1/3 cup) homemade chicken stock
- 1 tsp tomato puree (paste)
- 1 tsp fresh basil, chopped
