Spaghetti with Tomatoes, Garlic, and Feta Cheese

In a large glass or stainless-steel bowl, combine the tomatoes, olives, feta, capers, parsley, salt, and pepper
- 1 1/2 pounds tomatoes (about 3), seeded and cut into 1/2-inch pieces
- 1/4 pound feta cheese, crumbled
- 3 tablespoons chopped flat-leaf parsley
- 1/4 teaspoon salt
- 1/4 teaspoon fresh-ground black pepper
- 3/4 pound spaghetti
- 6 tablespoons olive oil
- 3 cloves garlic, minced
Paleo Cinnamon Rolls

Cinnamon rolls were a Christmas tradition in our house
- DOUGH:
- 2 eggs
- 1 tablespoon maple syrup or honey
- 1/4 cup ghee or coconut oil
- 2 1/2 cups almond flour
- 1/2 teaspoon sea salt
- 1/2 teaspoon baking soda
- FILLING:
- 2 tablespoons ghee or coconut oil melted
- 2 tablespoons cinnamon
- 3 tablespoons maple or coconut sugar
- ICING:
- 1/4 cup coconut milk
- 1/4 cup maple or coconut sugar
- 1 teaspoon vanilla
- 1 1/2 teaspoon arrowroot
tomatoless meat sauce

- 2 tablespoons unsalted butter (bacon fat will work too, just reduce the salt slightly)
- 2 tablespoons extra virgin olive oil
- 2 cups carrots, peeled and diced
- 2 cups beets, peeled and diced
- 1 cup yellow onion, peeled and diced
- 1 celery stalk, chopped
- 5 garlic cloves, minced
- 3 pieces of bacon, chopped
- 2 1/2 teaspoons sea salt
- 1/4 teaspoon fresh cracked pepper
- 3/4 cup dry red wine
- 1 cup chicken stock
- 2 bay leaves
- 1 tablespoon fresh basil, chopped
- 1 1/2 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1 tablespoon apple cider vinegar
- 1 pound ground beef, veal, or pork
Paleo balsamic vinaigrette

In blender or food processor add vinegar, salt, pepper and garlic and purée until smooth
- 1/4 cup balsamic vinegar
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 clove of garlic
- 3/4 cup olive oil
Faux-mato Marinara Sauce

Fill a large pot with water
- 3 carrots
- 1 small butternut squash or half a large one, about 1 1/2 pounds (peeled and de-seeded)
- 1 small beet quartered (when blending I add just a half at first and then add to taste)
- 1 stalk of celery (sliced)
- 1 1/2 cups water or a mix of your favorite wine
- 3-5 cloves of garlic (minced)
- 1 large onion diced
- 1-2 TBLS Ghee or Coconut oil
- 1 tsp dried basil & or thyme (more if fresh)
- 1 tsp dried oregano(more if fresh)
- 1/4 parsley chopped
- 2-4 tablespoons olive oil
Paleo Blueberry Muffins

Preheat oven to 350 and line 12 muffin cups with paper liners
- 2 1/2 cups almond flour
- 1/4 tsp salt
- 1/2 tsp baking soda
- 1/4 ghee/coconut oil
- 1/4 cup maple syrup/honey
- 1/4 cup coconut milk (canned)
- 2 eggs
- 3/4 cup frozen blueberries (I prefer tiny wild blueberries)
- Maple sugar (for sprinkling on top)

Cook: Top and tail the green beans and wash; steam until soft, mix to a nice puree
- Ingredients:
- As much green beans as you wish to prepare.
- Green beans and Asparagus puree (7 months+)
- 4 fresh asparagus spears cut into 1 cm pieces
- 50 g frozen green beans, thawed and diced
- 1 knob of butter
- Green beans and Chicken pasta bake (12 months +)
- 70 g frozen green beans, thawed and diced
- 120 g chicken breast, cut into small pieces (about 1/4 inch pieces)
- 1 clove garlic, crushed
- 1 Tablespoon diced brown onion
- 50 g small pasta shapes, uncooked
- 1 Tablespoon flour (I used organic flour)
- 1 small carrot, peeled and diced
- 1 Teaspoon mild curry powder
- 1 Tablespoon vegetable oil
- 20 g cheddar cheese, grated
- 3 Tablespoons mashed potatoes
- 1 1/4 cups homemade chicken stock or water
Grilled Mediterranean Chicken Vegetable Kabobs

-Add all Marinade ingredients and whisk together -put chicken in ziplock bag, add marinade and shake to coat -all
- Rosemary-Lemon Marinade
- 1/4 cup lemon juice
- 3 tablespoons olive or vegetable oil
- 2 teaspoons chopped fresh rosemary leaves or 1 teaspoon dried rosemary leaves
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 4 cloves garlic, finely chopped
- 3 Chicken Breast cut into 1/2 inch pieces
- 1 medium red bell pepper, cut into 1-inch pieces
- 1 medium zucchini or yellow summer squash , cut into 1-inch pieces
- 1 medium red onion, cut into wedges

Almond Flax Crackers

- 1/4 cup ground flax meal
- 1-2 T finely chopped fresh rosemary
- 1 egg white
