Baby- Pumpkin

Pumpkin is best when baked though you may peel, cube and steam it
- 1 sugar pumpkin
- water
- cinnamon, nutmeg (optional - sprinkle into the cooking water or when you puree/mash)
Baby- Creamy Pumpkin Soup

- 16 ounces Pumpkin (canned or fresh pureed)
- 13.75 ounces Chicken Broth or Homemade Stock
- 1 Large Onion
- 2 Carrots (Wheels or Diced)
- 2 cups half and half or evaporated milk (sub. with yogurt if desired)
- 1/4 cup Sour Cream (optional)
- 1/8 teaspoon Pepper
- 1 teaspoon Cinnamon
- Dash of Nutmeg
- 1/2 teaspoon Baking Soda
- 1/3 teaspoon( or less) Salt
Jello- Home Made

Put 1/4 cold water in a 1-quart bowl sprinkle the envelope of plain gelatin (1 Tablespoon) on top and let it soften
- 1/4 Cup Cold water
- 1 TBSP plain gelatin
- 3/4 Cup boiling water
- Honey (other sweetener) to taste
- 1 Cup fruit juice
- Optional 1-2 Cups Fruit add in
- Put 1/4 cold water in a 1-quart bowl and sprinkle the envelope of
- plain gelatin (1 Tablespoon) on top and let it soften.
- Stir in 3/4 cup of boiling water and honey "to taste" (It might not need any.)
- Stir to mix well. Add one cup of fruit juice and stir again.
- If you want to put it in a mold, oil the mold and pour in your jello
- mixture. Chill until set. Or, if you want fruit in your jello (after the Intro), add
- 1-2 cups of fruit when it just starts to set and then continue
- chilling until completely set.
- This makes 6 servings.

Feta, Spinach and Caramelized Onion Stuffed Chicken Breasts

Heat 1 tsp of olive oil in a skillet over medium heat; sauté onion until caramelized, approximately 15-20 minutes
- 2 tsp olive oil, divided
- 1 small sweet yellow onion(s), chopped
- 1 clove of garlic, minced
- 5 oz fresh spinach, chopped
- 1 tbsp balsamic vinegar
- 1 tsp lemon zest, chopped
- 1/4 cup feta cheese, crumbled
- Salt and pepper to taste
- 3 boneless, skinless chicken breasts, trimmed of any fat
Homemade Coconut Milk

- 1/2 c. coconut - Shredded, unsweetened, dried coconut. (Organic is best, so you’re not getting any sulfites in it.)
- 4 cups of really hot water (water that was boiled and then cooled for a minute)

1.Preheat your mini donut making machine OR preheat the oven to 350 degrees if you are using a regular donut pan or...
- For the Donuts
- 2 1/2 cups blanched almond flour (such as Honeyville)
- 1/2 teaspoon baking soda
- A scant less than 1/2 teaspoon salt
- 6 tablespoons honey
- 1/4 cup coconut oil, softened or liquid
- 1 tablespoon vanilla
- 1 teaspoon Lemon juice
- 3 whole large room temp eggs
- Coconut caramel topping
- 1 can full-fat coconut milk (about 1 1/2 cups), I used guar gum-free Natural Value
- 1/2 cup mild flavored honey or maple syrup,
- A pinch of sea salt
- 1 rounded tablespoon ghee or butter (can sub palm shortening or coconut oil)
- 2 teaspoons vanilla extract
- 1/4 cup finely shredded coconut, plus 2 more tablespoons for garnishing
- For the Dipping Chocolate
- 1 bag Enjoy Life Chocolate chips (melted in a double boiler)

- NOTE: Substituting 1/4 cup + 2 tbsp almond meal flour in place of the quinoa works too.
- 1 cup almond meal flour (I use Bob's)
- 2 tbsp arrowroot powder (tapioca would probably work also)

- Optional: herbs and spices (I used 1/2 tsp each of onion and garlic powder)
