Ingredients
- 2 C packed cilantro sprigs
- 2 cloves minced garlic
- 1 T lemon juice
- 1/4 C + 1 T olive oil
- Salt & pepper
- 1 1/2 lb. shrimp
- 3 thinly sliced scallions
- 1 minced jalapeño
- 1/4 C white wine
- 1 C V-8 juice
- 1 T butter

Preparation
Step 1
In processor, combine cilantro, garlic & lemon juice; process to paste. With machine on add 2 T olive oil. Scrape into small bowl & season with salt & pepper.
In large skillet, heat 3 T olive oil. Add shrimp & cook over mod heat, stirring, until barely cooked through, @ 4 min. Transfer to serving platter.
Add scallions & jalapeno to skillet & cook over mod heat for 1 min. Add wine & simmer until reduced by half, @ 3 min. Add V-8 juice & simmer until reduced by half, @ 4 min. Return shrimp to skillet & stir in cilantro pesto & bring to a simmer. Season with salt & pepper. Stir in butter & serve.
