Pomegranate Jalapeño Glazed Ham
- One 7 lb spiral ham (one ham steak for 3)
- 1 C chicken stock
- 20 whole cloves
- One 10 oz. jar jalapeno jelly
- 1 C pomegranate juice
- 2 T lemon juice
- 2 T Dijon mustard
- 1/4 t cinnamon
- 14 t ground ginger

Cooking time 150mins
Preheat oven to 325. Place ham in large roasting pan; add chicken stock. Stud ham with cloves all over.
In med saucepan, bring jalapeño jelly, pomegranate juice & lemon juice to boil. Simmer over mod heat until slightly thickened, @ 10 min. Whisk in the mustard, cinnamon & ginger & simmer until reduced to @ 1 1/4 C @ 5 min.
Drizzle half of glaze over ham & cover with foil. Roast for 1 1/2 hrs, basting frequently, until thermometer reads 125. Remove foil & brush ham with remaining glaze. Roast 30 min longer. Transfer to platter; discard cloves. Pour pan juices over ham & serve
