Ingredients

  • 1 5 oz. can water packed tuna, well drained
  • 1/4 C diced tomato
  • 2 T minced red onion
  • 1 T chopped Kalamata olives
  • 1 T chopped dill
  • 1 1/2 t red wine vinegar
  • 1 t EVOO
  • 1 slice prosciutto, finely minced
  • Kosher salt & ground pepper
  • 2-4 slices boule type bread
  • 3 oz finely grated Comte, Emmentaler or Gruyere cheese

Preparation

Step 1

Heat broiler on high.
In med bowl, combine tuna, tomato, red onion, olives, dill, vinegar, olive oil, prosciutto, salt & pepper.
Put bread on rimmed baking sheet & broil until nicely toasted. Remove from broiler, flip bread over & spread tuna mixture evenly over each slice. Top with cheese & broil until cheese is melted, 1-2 min.
