Turkey Jasmine Rice Meatballs

Bring water to boil in small saucepan
- Sauce:
- 1 C water
- 1/3 C uncooked Jasmine rice
- 1/4 C bread crumbs
- 3/4 t salt & pepper
- 1 1/4 lb ground turkey
- 2 eggs
- 1 clove minced garlic
- 1 T olive oil
- 1 1/2 T sherry
- 1 t minced ginger
- 1 clove minced garlic
- 1 T soy sauce
- red pepper flakes
Hearty Minestrone Soup

In pot cover beans with 2" water & bring to boil
- 1 1/4 C dried white beans, soaked overnight & drained
- 3 T olive oil
- 2 oz. finely diced pancetta
- 2 medium minced shallots
- 2 large finely diced celery ribs,
- 1 medium finely diced onion
- 1 large finely diced carrot
- 1/2 fennel bulb, cored & diced
- 4 cloves minced garlic
- 1/2 t crushed red pepper
- 2 bay leaves
- 2 T toamto paste
- 1 14oz can chopped plum tomatoes
- 1 qt. chicken stock
- Salt & pepper
- 1 C baby arugula
- 1/2 C Italian parsley
- 1 T lemon juice
Curried Pork and Squash

Season pork medallions with curry powder, salt & pepper
- 1 pork tenderloin, cut into 6 medallions, slightly flattened
- 1 t curry powder
- Salt & pepper
- 2 T olive oil
- 2 T butter
- 1/2 C butternut squash cut into 1/3" dice
- 1 small red onion thinly sliced lengthwise
- 1 T balsamic vinegar
- 1 t thyme leaves

SALSA: Combine all ingredients in med
- TOMATO SALSA:
- 2 med. diced tomatoes
- 1 med. diced yellow bell pepper
- 1 clove minced garlic
- 1 small diced onion @ 2/3 C
- 2 T chopped cilantro
- 1/2 chopped jalapeno
- Salt & pepper
- PANCAKES:
- 2 med. shredded zucchini
- 1/4 t. salt
- 2 t olive oil
- 2 ears corn, kernelled
- 2 beaten eggs
- 1 c all-purpose flour
- 1/2 c milk
- 2 t chopped cilantro
- 2 t baking powder
- ground pepper
Jicama Carrot Salad

Combine dressing ingredients; add jicama & carrots & toss to serve
- 1/4 C olive oil
- 1 t toasted cumin seed
- 1/2 t sugar
- 2 T lime juice
- 1/4 t salt & 1/8 t pepper
- 1 lb. shredded jicama
- 12 lb. shredded carrot
Caraway Sauerkraut

In heavy skillet over med heat, melt butter
- 2 t butter
- 1/4 C chopped onion
- 1 T + 1 teaspoon all purpose flour
- 1/4 C dry white wine
- 3/4 C beef broth
- 1 t caraway seeds
- 1/2 t paprika
- 2 1/2 C sauerkraut, rinsed well & drained & squeezed dry
Citrus Risotto with Seared Garlic-chile Shrimp

1. In mortar pound garlic & jalapeno to make a paste
- 2 cloves chopped garlic
- 2 small jalapenos, chopped
- 6 C chicken stock
- 3 T butter
- 3 T olive oil
- 1 small minced onion
- 1 1/2 C arborio rice
- 1 T lemon juice
- 1 1/2 t lemon zest
- Salt & pepper
- 1/2 lb shrimp
- 1/4 C chopped parsley
- Lemon wedges for serving
Spicy Sauteed Kale with Shredded Cheese

- 1/4 C olive oil
- 4 thinly sliced garlic cloves
- 1 jalapeño, halved, thinly sliced
- 1/4 t crushed red pepper
- 2 1/2 lb Kale, coarsely chopped
- 2 T lemon juice
- Kosher salt
- Shredded ricotta salata

- 1/4 C pomegranate molasses
- 1/2 C water
- 3 T olive oil
- 1 large onion, finely chopped
- 2 t curry powder
- 1 T minced garlic
- 4 canned tomatoes, seeded & finely chopped
- Salt & pepper
- 1 lb. shrimp
- 1/2 C finely chopped cilantro
