Slow Cooker Stew that is healthy and hearty
- 1/4 cup all purpose flour
- 2 lbs boneless beef chuck roast, trimmed and cut into 1 inch cubes
- 2 TBSPs canola oil
- 1 can (10 3/4 oz) condensed tomato soup, undiluted
- 1 cup water or red wine
- 2 reduced-sodium beef bouillon cubes
- 3 tsps Italian seasoning
- 1 bay leaf
- 1/2 tsp coarsely ground pepper
- 6 white onions or yellow onions quartered
- 4 medium potatoes, cut into 1 1/2 inch slices
- 3 med carrots, cut into 1 inch slices
- 12 large fresh mushrooms
- 1/2 cup sliced celery
- Hot cooked noodles or french bread, optional
Mexican Corn Bread

Prepare corn bread as directed on package, adding corn and jalapeno peppers
- 1 - 8 1/2 oz pkg corn bread mix
- 1 8 3/4 oz can cream style corn
- 1/2 tablespoon finely chopped jalapeno peppers
- 1 8 oz cup sharp cheddar cold pack cheese spread
