For people on a low sugar diet, this is the best
- 6 cups (1/8 inch thick) slices peeled apples (granny smith)
- 1/4 cup unsweetened apple juice
- 1/4 cup packed brown sugar
- 2 tablespoons all-purpose flour
- 1 tablespoon cornstarch
- 1 teaspoon ground cinnamon
- 1/4 teaspoon freshly ground nutmeg
- 1/4 teaspoon salt
- baking spray with flour
- 2 tablespoons unsalted butter, diced
- 1 large egg white, lightly beaten
- 2 teaspoons granulated sugar
- 1 - fail proof pie crust

- 3 1/4 lbs russet potatoes
- 1 cup whole milk
- 1/3 cup light sour cream
- 1/4 cup reduced-fat buttermilk
- 1 cup (4 oz) shredded fontina cheese
- 1/4 cup finely chopped chives
- 2 TBSPs butter
- 1/2 tsp salt
- 1/2 tsp black pepper
- 6 TBSPs grated fresh Parmigiano-Reggiano cheese
Easy Taco Casserole

- 1 lb ground beef or turkey
- 1 large red onion, chopped reserve 1/4 for later use
- 1-2 jalapeno pepper, chopped and seeded
- 1 garlic clove, chopped
- 1 (15 oz)can black beans, drained
- 1 cup Pace Picante Sauce
- 1 (1 1/4 oz) package taco seasoning mix
- 2-3 drops hot sauce, if more heat is desired, or 2-3 dashes ground red pepper, if more heat is desired
- 1 (2 cup) package of shredded mexican cheese, reserve 1/4 package for later use
- 1 1/2 cups crushed tortilla chips, preferably jalapeno peppers flavored

- 3/4 cup half and half
- 2 TBSPs all purpose flour
- 1/4 tsp salt
- 12 eggs
- 2 TBSPs Dijon mustard
- 6 oz Cheddar cheese, grated 1 1/2 cups (use low fat for less calories)
- 8 oz bacon, cooked and crumbled (1 1/2 cups) - Use turkey bacon for less fat
