Ingredients

  • 1 cup shortening (part butter is ok)
  • 2 cups sugar
  • 1 tsp vanilla
  • 2 cups persimmon pulp
  • 2 eggs
  • 4 cups flour
  • 2 tsp soda
  • 1 tsp salt
  • 1/2 tsp nutmeg
  • 1 1/2 tsp cinnamon
  • 1 1/2 cup raisins
  • 1 cup nuts

Preparation

Step 1

1) Beat first 5 ingredients together until smooth.
2) Add remaining ingredients except for raisins and nuts. When all mixed add last two ingredients.

Drop dough on greased cookie sheet;
Flatten cookies slightly with fork dipped in water (before baking)

Bake 15-18 minutes at 350 degrees.
