  • 3 1/2 cups water
  • 3 cups fat-free, less sodium chicken broth
  • 3 cups chopped carrot (about 1 lb)
  • 1/4 cup half-and-half
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1/3 cup reduced-fat sour cream
  • 2 TBSPs chopped fresh flat-leaf parsley

Prep time: 20 minutes Start to Finish 1 hour 100 Calories for 1/2 cup serving 3

  • 2 TBSPs butter or margarine
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 1/2 lb butternut squash, peeled, seeded and cut into 1/2 inch cubes (about 5 cups)
  • 2 to 3 large Granny Smith apples, cored, cut into 1/2 inch cubes (4 cups)
  • 1/4 cup real maple or maple-flavored syrup
  • 1 TBSP Balsamic Vinegar
  • 1/4 cup chopped pecans, toasted
  • To toast, sprinkle in ungreased heavy skillet. Cook over med heat 5 to 7 minutes, stirring frequently until pecans begin to brown, then stirring constantly until light brown.
