Nice Change for Turkey
- 2 tubes (8 oz each) refrigerated crescent rolls
- 1-1/2 pounds ground turkey
- 1/2 cup chopped onion
- 1/2 cup finely chopped carrot
- 1 tsp minced garlic
- 2 cups finely chopped cabbage
- 1 can (10 3/4 oz) condensed crem of mushroom soup, undiluted
- 1/2 tsp dried thyme
- 1 cup (4 oz) shredded part-skim mozzarella cheese
Chicken Chilaquiles

For even more heat, add 1/4 teaspoon ground red pepper to the tomatillo mixture
- 2 cups shredded cooked chicken breast
- 1/2 cup chopped green onions

- 2 large cucumbers - halved lengthwise, seeded and sliced
- 1/3 cup red wine vinegar
- 1 TBSP white sugar
- 1 tsp salt
- 3 cups diced, assorted heirloom tomatoes
- 2/3 cup coarsely chopped red onion
- 1/2 cup chopped fresh mint leaves
- 3 TBSPs olive oil

- 1 14 1/2 oz can stewed tomatoes (no salt added)
- 1 10 oz can diced tomatoes and green chiles
- 1 cup shredded reduced-fat cheddar cheese
Do Ahead Garlic Mashed Potatoes

- 3 lbs potatoes (about 9 medium) peeled and cut into pieces
- 6 cloves garlic, peeled
- 3/4 cup milk
- 1/2 cup whipping (heavy) cream
- 1/2 cup butter or margarine
- 1 tsp salt
- Dash pepper
- Alternatives: If not serving gravy: Sprinkle 1 cup crushed herb-seasoned croutons over potatoes
- 2 ) Sprinkle 1 can 2.8 oz French-fried onions over potatoes
- 3 ) Place puchased pesto in a resealable plastic bag; snip off a tiny corner and drizzlr pesto over potatoes

- 1 med jalapeno pepper, seeded and finely diced (more if you want it spicier)
- 1 (15 oz) can black beans, rinsed and drained
- 1 (11 oz) can Mexicorn, drained
- 1 avocado, peeled, pitted and diced
- 3 TBSPs cider vinegar
- 1 lime, juiced
- 1 clove garlic, minced
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1 TBSP olive oil
