Neiman-Marcus Cookies

Measure oatmeal and blend in a blender to a fine powder
- 2 cups margarine
- 2 cups brown sugar, packed
- 2 cups sugar
- 4 eggs
- 2 tsp vanilla
- 4 cups flour
- 5 cups quick style oatmeal, blended
- 1 tsp salt
- 2 tsps baking powder
- 2 tsps baking soda
- 2-12 oz bags chocolate chips
- 1-8 oz Hershey Bar, grated
- 3 cups chopped nuts
Orange Sherbet Salad

First layer: Dissolve orange jello in hot water, then add orange sherbet and oranges
- First layer:
- 1 small pkg orange flavored jello
- 2 cups hot water
- 2 cups orange sherbet
- 1 can mandarin oranges
- Second layer:
- 1 small pkg lemon flavored jello
- 2 cups hot water
- 1-8 oz container whipped topping
Chocolate Eclair Cake

Preheat oven to 400. Lightly grease a 9″X13″ glass baking pan
- 1 cup water
- 1/2 cup butter
- 1 cup flour
- 4 large eggs
- 1 (8 ounce) package cream cheese, softened
- 1 large box (5.1 ounces) vanilla instant pudding
- 3 cups milk
- 1 8 oz. container cool whip (you won’t use the whole container) or one batch of homemade whipped cream
- chocolate syrup or homemade chocolate sauce
Spicy Kielbasa Soup

In a nonstick skillet, cook kielbasa over medium heat until lightly browned
- 1/2 pound reduced-fat smoked turkey kielbasa,sliced
- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 1 celery rib with leaves, thinly sliced
- 4 garlic cloves, minced
- 2 cans (14 1/2 oz. each) reduced-sodium chicken broth
- 1 can (15 1/2 oz.) great northern beans, rinsed and drained
- 1 can (14 12 oz.) stewed tomatoes, cut up
- 1 small zucchini, sliced
- 1 medium carrot, shredded
- 1 tablespoon dried parsley flakes
- 1/4 teaspoon crushed red pepper flakes
- 1/4 teaspoon pepper
Salisbury Steak

Cut 1 onion in half. Grate half and slice the other half
- 2 onions
- 1 lb. ground beef
- 1 egg
- 1 tablespoon Dijon mustard
- 1 teaspoon salt, divided
- 1/2 teaspoon black pepper, divided
- 1/2 teaspoon garlic powder
- 1 tablespoon canola oil
- 2 cloves garlic
- 3 cups low sodium beef broth
- 1 tablespoon cornstarch, mixed with 1 tablespoon cold water
Poppy Seed Cake

Cake: Prepare cake mix as directed on box and stir in poppy seeds
- 1 Sour Cream White Cake Mix
- 1/3 cup poppy seeds
- 3 egg yolks
- 1 cup sugar
- 1/2 cup margarine
- 1 tsp vanilla
- 1 cup evaporated milk
- 1-8oz container extra creamy whipped topping
Orange Chicken

Combine flour, salt and pepper
- Orange Sauce:
- 2 lbs. boneless skinless chicken breasts (cut into 1 1/2 inch cubes)
- 1 1/2 cups flour
- 1 egg, beaten
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Oil for frying
- 1 1/2 cups orange juice and zest from one orange
- 1/3 cup rice vinegar
- 2 1/2 tablespoons soy sauce
- 1 cup packed brown sugar
- 1/2 teaspoon ginger root, minced
- 1/2 teaspoon garlic, minced
- 2 tablespoons green onion, chopped
- 1/4 teaspoon red pepper flakes
- 3 tablespoons cornstarch
- 2 tablespoons water
Butterscotch Crunch Dessert

Mix flour, oatmeal, brown sugar, margarine, and nuts and pat into 9 x 13 inch cake pan
- 1 cup flour
- 1/4 cup quick type oatmeal
- 1/4 cup brown sugar
- 1/2 cup margarine
- 1/2 cup chopped nuts
- 1/2 of 12 oz container caramel ice cream topping (can also use chocolate syrup-either by itself or half and half with the caramel flavored syrup)
- 1 quart vanilla ice cream
Zucchini Fritters

Place grated zucchini in a colander over the sink
- 1 1/2 pounds zucchini, grated
- 1 teaspoon salt
- 1/4 cup[ all purpose flour
- 1/4 cup grated cheese
- 2 cloves garlic, minced
- 1 large egg, beaten
- Kosher salt and freshly ground pepper, to taste
- 2 tablespoons olive oil
Crockpot Tamale Bake

1. In a large skillet, brown and crumble the ground beef with the onion and garlic until meat is no longer pink
- 1 lb lean ground beef or ground turkey
- 1/2 cup finely diced onion
- 1 teaspoon minced garlic
- 3/4 cups yellow cornmeal
- 1 egg
- 1 1/2 cups milk
- 1 (15.25 oz) can corn, drained
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 envelope taco seasoning mix
- 1 (2.25 oz) can sliced black olives, drained
- 1 cup shredded Cheddar cheese
- Minced green onion, for garnish (optional)
